Zucchini and Shells

This recipe came out pretty good! I only used 1 Tbsp of olive oil, omitted the sugar and the water. There is no reason to add water here, it's much better a nice and thick sauce. I also added some fresh tomatoes, basil and cooked for only 30 minutes because I wanted the vegetables nice and tender. Served over whole wheat pasta shells. Next time I want to try a little more "cheesy", some mozzarella and extra Romano. Thanks for the recipe I will definitely make this again!

California Taco Dip

This dip was a huge hit! To me was just ok, but everyone was asking for the recipe. I used my own homemade taco seasoning and since I didn't have any green onions, I topped with tomatoes, onions and fresh cilantro. I omitted the black olives because I just don’t like them.

Applesauce Bars

Very good! I didn't have any pumpkin pie spice, so I used 1/2 tsp of cinnamon and 1/4 tsp of nutmeg just as suggested by another reviewer. Also, I didn't make the frosting, just powdered sugar was enough for us.

Minestrone Soup I

Tasty Lentil Tacos

Fantastic! I can't believe how great this turned out. I was skeptical at first, I saved this recipe so long ago, but haven't made before because it sounds so weird. I omitted the oregano, chili and cumin and added my homemade taco seasoning and some jalapenos. Served with homemade Guacamole on a soft tortilla.

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

Wonderful recipe! I'm not a big fan of tomatoes, so I only used organic zucchinis. I sautéed them on high less than 8 minutes, probably 3 minutes per side, because I was afraid they would turn "mushy". The fresh basil complements and gives this dish a really nice flavor. Thanks Phil!

Sweet Vanilla Cupcakes

These cupcakes are absolutely delicious! I've been looking for a good vanilla recipe cupcake and this is a winner! I really like it's not over sweet. My kids don't like any frosting, just plain simple vanilla cupcakes.

Easy Batter Fruit Cobbler

Wow, this is fantastic! I had some fresh organic peaches and it came out perfect. I usually add less sugar than a recipe calls for, but this one was the right amount. I used 4 large peaches and I dipped in very hot water (but did not boil them) for probably 5 to 7 minutes, this makes easier to peel them.

Wonderful! Really nice and moist bread. I made a few changes just as Naples34102 suggested. I used 1 3/4 cup flour, 1 tsp of baking soda, 1 tsp baking powder and I used butter at room temperature (not melted). Thanks!

Mango Chicken Curry

Really nice flavors on this dish! I omitted the cayenne pepper because I wanted the kids to eat as well. Also, after I sautéed the chicken and added all the ingredients, I transferred to a crock pot. It turned out into a nice, thick and caramelized sauce. Very, very delicious!

This is such a light and delicious dish. I used Mahi-Mahi because we don't like tilapia and I just sprayed olive oil on the fish instead of 1/3 cup.

These were very good! I baked at 425 degrees 10 minutes each side. Next time I will try to drain the zucchini as much as possible before adding the other ingredients.

Wonderful and easy pie recipe! To cut on fat I only used 2 Tbsp of butter and halved the amount of sugar. I also added a little cinnamon and made Pastry for Double Pie-Crust recipe from this site.

Pastry for Double Pie-Crust

This was my first time ever making a pie crust and the results were excellent. I don't think I will be able to ever again to use a store bought pie crust. Just as suggested by other reviewers, I used ice-cold water, 1 tsp of sugar and I used butter flavored shortening.

Frozen Strawberry Yogurt
