This recipe is excellent! I read ElectRicity's note and followed her advice, I only used organic fat free plain yogurt and added lemonade concentrate, I omitted honey and used frozen mangoes instead of canned because that's what I had. I was skeptical of the Cardamom but it gives a really nice flavor. I will be making this again, thanks for the recipe!

Lite Sausage Primavera

This was a simple and tasty recipe. I first sauteed the onions, then added the veggies (zucchini, tomatoes, green and red peppers), once done I set aside. Then I sauteed chicken sausage, and added to the veggies and served over whole wheat penne. Fresh chopped basil and some parmesan gives a really nice flavor to this dish.

Oatmeal Date Bars

This is a great recipe. I only used 1/3 cup of brown sugar to the oatmeal mixture and no sugar at all to the dates, only water. I'm glad I did this because it would have been way too much.

Grilled Salmon with Curried Peach Sauce

So delicious! I was looking for a different way to make salmon and this recipe was a nice change. I halved the amount of honey and next time I will use even less because it was a little too sweet for my taste, other than that this is an excellent recipe!

Wow, these egg rolls were sooo good!!! I doubled the recipe, used fresh cilantro instead of parsley and omitted the spinach because I was out of it. Baked instead of frying.

This is a very light, simple and delicious dessert. I used real maple syrup because I don't like honey. I also forgot to add some nuts but will for sure add next time. Thanks Olivia!

Mushroom Pork Chops

My husband and kids really enjoyed this dish. As suggested by other reviewers I browned the butterfly (no bones) pork chops first and set aside, then de-glazed with some white wine, added fresh garlic, onion, mushrooms and soup. Trafsferred everhything to a crok pot, added 2 cubed potatoes and cooked for 3-4 hours. Very easy, I will definitely make this again.

Zucchini Brownies

Sooo good! I omitted the nuts because hubby doesn't like it in anything baked. I used only 1 cup of sugar in the batter, and halved the amount of sugar on the frosting. Still a little too sweet for my taste, next time I will not add any frosting.

Zucchini Parmesan

This dish was absolutely delicious! I read the reviews and made some changes just as suggested. I cut the zucchinis lengthwise added some salt and let stand for 20 minutes, then rinsed and pat dried with paper towel, this is very important because it will eliminate all the liquid from the zucchinis. Then I baked the zucchinis for 10 minutes each side at 450 degrees. Once the zucchinis are ready, I reduced the oven to 325 degrees and started combining everything just as on the recipe with some Parmesan besides the mozzarella. It turned out excellent; I will definitely make this again.

Bean Quesadillas

Good basic recipe, but it needs much more flavor. I added homemade taco seasoning, cilantro and instead of black beans I used pinto beans just because I prefer this way. Baked at 350 degrees for 10 minutes.

I loved this recipe, so healthy and tasty. I used real maple syrup instead of honey because I don 't like honey. I also reduced the amount of sugar in half and added toasted almonds instead of chocolate chips, just a preference. Thanks for the great recipe!
