Zucchini Pie II

1ST RECIPE I HAVE RATED - EVEN THO I HAVE TRIED OVER 100 "AR" RECIPES. USED 1CUP MINUS 2 TABLESPOONS SPLENDA INSTEAD OF SUGAR...ALSO USED 6-7 CUPS ZUCCHINI. ALL ELSE AS WRITTEN. USED HUSBAND (DIABETIC), GRAND-KIDS, GREAT GRAND-KIDS, NEIGHBORS, AS TASTE TESTERS AND NONE KNEW IT WASN'T "REAL" APPLE PIE. NO ONE WAS MORE SURPRISED THAN I AT THE EXCELLENT FLAVOR. ADDED BONUS WAS HOW WELL IT HELD TOGETHER AND CUT INTO PIE PORTIONS WITHOUT BEING RUNNY OR FALLING APART. P.S..cut the zucchini long ways, then slice (not cube) so the slices even LOOK like apple slices.

Twice Baked Sweet Potatoes

Lost my recipe very similar to this one so will post this to my recipe box. The other recipe did not have the oil or foil step but essentially the same otherwise. The recipe as written a definite 5. I had to sub SPLENDA sugars and imitation honey for diabetic hubby and have subbed pecans or macadamias when walnuts not available. Being a lazy cook, I microwave the sweet potatoes and then follow the recipe from there.

Cinnamon Swirl Bread

If I had been able to use the exact ingredients I know it would be a 5, so 5 it is. I have to use SPLENDA and it' stil very, very good and quick. I thought it wasn't going to rise at all but it did. Everyone is right, even better the next day.

Butternut Squash Soup II

Really good on a cold nite but I too thought it needed the sour cream or something to make it a 5. For ease in cooking I microwaved the squash and potatoes, peeled, and put in blender. Really a different soup for us but we liked it.

Coconut Shrimp I

NEED I ADD TO THIS? Have always been afraid to try coconut shrimp after one disaterous attempt but this is the easiest and best recipe around. Being lazy I used a spiced up pancake batter to coat (after dipping in flour and putting in frig for 30 min or more). Didn't lose any coconut or batter when frying in skillet on top of stove. David ate 18 all by himself. Freezes (uncooked) great.

Sugar Coated Pecans

Very good. I also used SPLENDA and LESS of it than sugar, (I always find Splenda makes a recipe sweeter, maybe just me) otherwise followed recipe as is. The second batch I added dry mexica chili powder and it was even better, if possible. Thanks for good, tasty, easy recipe.

Oatmeal Pancakes II

Light and fluffy, just like we like them. Diabetic in the house soooo..2 substittions..whole wheat flour instead of white and Splenda instead of sugar. I added 1/4 teaspoon more baking powder (no after taste noticed). I did blend the oats and buttermilk, egg and vanilla in the blender and then added to dry ingredients. This had just the right amount of sweetness for David but I would have liked a bit more "flavor". I believe the original recipe would have done it for me, hence the 5 stars.

Jalapeno Chicken II

Made this about an hour ago and wish I'd made twice as many. David kept saying "Ummm, delicious". I used canned pickled jalapenos, seed, membranes removed. I used string cheese because it's easier (to me) than cream cheese. I wrapped with 3 pieces bacon per breast and cooked in skillet on stove. Even with the very minor changes, this is a 5 star because it ALLOWED the changes but still kept the integrity of the recipe. This might be a bit warm for kiddos but the heat of the canned peppers dissapated quickly in the mouth (not the lingering burning). Thanks Christi

Absolute Mexican Cornbread

Especially good Mexican Cornbread IF you cut the butter amount in half. If made according to directions the sugar can be reduced by half as well or it's extremely sweet. My changes were...half the butter, eliminate sugar altogether and used a little less than 1/2 cup Splenda. Sometimes I use Jiffy corn bread mix (only 1 box per recipe) and sometimes I follow the recipe for the cornbread part. Didn't think I'd like it but David thinks it's "da bomb" and I DO really like it myself.

Breakfast Pies

Maybe I bought the wrong brand of biscuits (regular el-cheapo ones). Had a heck of a time lining muffin pans. The biscuits kept "contracting" after rolled out. I got them to roll out to about 4" but they immediately pulled together to about 3", not enough to line the individual cups. Other than that, quick and easy, tasty, and just a little mess due to biscuit problem. Will try again with different brand or even homemade biscuits. Fun idea and I know I can work it out. Thanks

Light and Fluffy Spinach Quiche

I made this quiche day before yesterday and followed the recipe to the T. I, personally didnt' think there was too much spinach BUT...my quiche was definitely NOT light and fluffy. More dense and heavy but GREAT TASTE. The density may have been due to using the full amount of spinach called for so next time I'll try it with maybe 1/2 or 3/4 spinach. Mine cooked fully in the first 45 minutes of time indicated. Thanks Kristinjoni...good one.

Tomato Chicken Parmesan

Really have to review after recommending at least 5 times since making it last week. I did bake it and it came out crispy on the outside, moist on the inside . (Can be changed up using enchilada sauce and garlic salt in the bread crumbs). I mean SERIOUSLY GOOD!

Pumpkin Chili Mexicana

I made this early in the morning, followed recipe except doubled spices. I wasn't thrilled with the results (the consistency was great, the taste...not so much). I even asked members what to do to give it more "chili" taste. I ended up not doing anything more to it. NOW IT'S ABOUT 6 HOURS LATER and I just came home. Couldn't resist another taste test.....WHAT A DIFFERENCE! This is very good and I would definitely make it again.s
