Green Tomato Cake

I would suggest pulping the tomatoes instead of chopping them and then let the pulp drain for 30 mins. I used 2 cups of puree instead of 4 cups of chopped tomatoes. The cake came out moist and my family never noticed the tomatoes in the cake until I told them! They all loved it! Definitely doing this one again!

Sour Cream Broccoli Casserole

Used natural yoghurt instead of sour cream and leftover chicken stuffing. Great recipe - kids loved it and its a great filler dinner. Will try it with some herbs next time to add to the flavour.

Mango-Pineapple Chutney

Good recipe. I've put the jars into a cool, dark larder to allow the curry powder to mellow in flavour. Nonetheless on initial tasting, there's a nice sweet/spicy flavour. I also put in some sultanas to give it some contrasting colour.

Lemon Sorbet

I don't have an ice-cream maker and once you get passed the regular mixing-up while freezing, it turns out great. Mine had a more "crumbly" texture than other sorbets probably because of the freezing method I was using, but the flavour was good. Next time I would try a little more lemon zest for a bit more punch.

Homemade Bagels

Really easy recipe to follow and the results were great. Thankfully the bagel size is smaller than the bakery version so it's kinder on the waistline too...obviously depending on the topping you choose!

Very Simple Spelt Bread

I've been trying various yeast-free spelt bread recipes for some time and this is so far the best - primarily because it rises so well and isn't dense. I used soy milk in the recipe because of intolerance to cows milk and the results were fantastic. Definitely the recipe for me from now on! And looking forward to making a savoury, tomato-and-herb version for dipping in olive oil (my favourite starter when my friends call round for food and a chin-wag).
