My favorite things to cook
I like to cook one-pot dishes and items I can freeze such as soups and chilis for quick meals because I am always on the go. I also love to cook with fresh, healthy foods such as salmon fillets and farmer's market vegatables when I have the time. Whole grains are also a big part of meals for me. I use whole wheat pasta almost all the time, brown rice, and have recently experimented with whole wheat couscous and quinoa.
My favorite family cooking traditions
My grandmother was Italian and cooked everything from scratch...gnocci, bread, perogies, pasta, soups, and tons of baking. I want my mom and I to get together more often to keep her mother's recipes alive.
My cooking triumphs
Fresh salmon fillets with a sweet thai chili mango & yogurt sauce. Healthy and delicious and very easy to prepare!

Yummy Pesto Mashed Potatoes
Followed the suggestions of others and doubled the amount of pesto. Nice and easy way to add some flavor to mashed potatoes.

Zucchini-Chocolate Chip Muffins
Currently my favorite muffin recipe! Moist and delicious. I used half whole wheat flour, brown sugar, and a small container of apple sauce with a bit of oil to top it up to 1/2 cup.

Throw Together Mexican Casserole
My guests and I loved this recipe! I used medium salsa and hot taco sauce and it had the perfect kick (and I don't like my food overly spicy). I added tex mex cheese blend on top for the last bit of cooking and served with sour cream as suggested. Also substituted whole wheat egg noodles and black beans instead of kidney beans. Next time I will add red or green pepper as well.
