Chewy Sugar Cookies

Reviewed: Sep. 18, 2010
This is a very good cookie recipe. I made it exactly as the directions indicated. The original recipe indicated a yield of 30 cookies. I was able to get 4 1/2 dozen (54 cookies). I made large cookies too, about 3 - 4 inches across. I refridgerated the dough after mixing all the ingredients for about 20 minutes and in between batches, but the dough never firmed up enough to roll. Instead I used my ice cream scooper, which is how I got such big cookies. Any smaller and I'd be eating cookies until next year. Since I wasn't able to roll the cookies, I didn't coat them in the additional 1/4 cup of sugar. That didn't turn out to be a problem because the cookies were plenty sweet enough. I ended up baking mine for 12 minutes and the cookies came out just slightly golden on the edges and perfectly soft on the inside. I will be using this recipe in the future in place of store-bought cookie dough.

Elegant Pork Chops

Reviewed: Sep. 18, 2010
This was a very simple dish to make. I doubled the recipe for my family and therefore used 2 cans of soup. One was regular condensed cream of mushroom soup and the other can was cream of mushroom with roasted garlic. Gave the dish the perfect amount of garlic flavor. Will definitely be making this again.

Laura's Unbelievable Chicken and Pasta

Reviewed: Sep. 16, 2010
I made this almost exactly as described. I sauteed onions and garlic and then added the chicken. There were no spices listed, so I seasoned the chicken with 1/2 a packet of dry Italian dressing seasoning. I made the sauce in a separate sauce pan and used the other 1/2 of the seasoning for added flavor. Everything else was the same. I topped it with parmesean cheese and served with garlic bread. Absolutely wonderful the first day and for leftovers. Even my three-year ate it - spinach and all!

Ground Beef Enchiladas

Reviewed: Jan. 13, 2008
This is an excellent recipe. I have made this time and again and it is a favorite in my house. The only ingredient I change is sour cream instead of yogurt. I also heat up refried beans and layer the beans, meat and then cheese/soup mix inside the tortillas. To make it extra cheesy, I sprinkle a heavy dose of cheese on top before popping it in the oven. The extra cheese and refied beans make it de-lish!

Macaroni and Cheese V

Reviewed: Jan. 11, 2008
I followed the recipe exactly. The milk mixture never thickened up on the stove. It only got thick once I added the cheese. The cheese didn't melt into a smooth mixture and was stringy and incredibly grainy. The bread crumbs were so overwhelming. I will never make it again. At least when I make it out of the box I know I'll be happy with the results and won't have spent an hour making it.

Marinated Baked Pork Chops

Reviewed: Jan. 5, 2008
Good flavor, good marinade. I doubled the marinade to have enough for a sauce. It's a thin sauce and not a sticky sauce unles you put it under the broiler uncovered like the other reviews say. Served with noodles or rice and it's a filling meal. Not something I would make all the time, but it's nice to have this recipe for a change every now and then.

Stuffed Pork Chops III

Reviewed: Jan. 5, 2008
This was a very good pork chop recipe. If you have thin pork chops you can still make this. Just pound them out to flatten them, put the filling in the middle of the chops and roll them up. Still use toothpicks to keep it closed so the filling doesn't spill out in the pan. The filling was rather dry based on the recipe so I added in two more tbsp of melted butter and this was just right. Dont make it too wet or the filling won't stay in place once the chops start cooking. Add a little cornstarch or flour to the juices when the chops are done and you have a great gravy instead of au jus.

BAKER'S® ONE BOWL Cake

Reviewed: Jan. 5, 2008
This is a delicious and literally one-bowl cake. The make it extra sweet I double the recipe to make a two layer cake. I also doubled the glaze recipe and used the glaze in between layers and on top. I also put fresh berries in between the cake layers for an added surprise. It may not seem like there will be enough chocolate flavor when you are making the batter, but it works out great. This is a fabulous alternative to a box mix for birthday cakes.

Hearty Mince

Reviewed: Jan. 5, 2008
This is a great tasting and easy weekday meal. I did use V8, and added in extra Worcestshire sauce, but I didn't use the sherry. I also eliminated the water and replaced it with more beef stock. For those who like to cut back on the fat, make sure to drain the meat before adding in the rest of the ingredients because this isn't noted in the directions. This is a favorite at my house and I have made it again and again. There are never any leftovers.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

Reviewed: Jan. 5, 2008
This recipe turned out great. I added a little lemon extract to the cake mix since the recipe for the cake didn't include any lemon flavor. The name of the recipe suggests that there would be too much lemon flavor, however the lemon was rather subtle in all layers, making for a great overall taste. Be careful when assembling, as too much frosting will make the cake layers slide a little.
