About this Cook
60 yr. old (it's the new 40) mom of 2, grandmom of 4. I love being at home, having the time to cook and to pursue my other million and 1 hobbies.
My favorite family cooking traditions
Old world Czech. dinner from my mother: Stewed chicken and homemade noodles. Always been my favorite. My MIL was a great cook too. She had a delicate touch with gravies and meat and a beautiful way of serving it all.
My cooking tragedies
My husband still laughs at one of my first attempts at cooking as a newlywed--potato pancakes. I didn't even know how to make a sandwich then and have been trying to teach myself to cook ever since.

Kale Salad
Best kale salad ever-however, lemon was a bit much; I'd cut it in half, but just added some extra butter lettuce I had on hand and that made it perfect this time. Next time I'll add 1/2 the sugar or agave; I blanched the kale for 10 minutes; also added some goat cheese. No need to refrigerate. Superb! *Next time I'll microwave kale for a minute with a few drops of water; so kale won't get too mushy..

Sour Cream Frosting
Excellent - all I had in fridge was light sour cream so was forced to try something different. I used orange extract plus the lemon juice to ice a 13x9 mandarin orange cake; also added a bit extra confec. sugar; otherwise it comes out like a thick glaze as others have said. I'm wondering if this icing is a better consistency in cool weather rather than hot; it's January now in the south and the butter was easier to cream rather in the hotter months- therefore it just csme out perfect for cake icing...

Easy Salmon Cakes
Too dry, heavy on the breadcrumbs, I added some of the juice from canned salmon, so worked out ok. Flavors went together well.
