Red Cabbage and Apples
Fantastic! I used brown sugar instead of white sugar. I shredded in my foodprocessor with the slicing blade: 3/4 of a large green cabbage, 1/2 of a very large sweet onion, and 3 small Granny Smiths, cored but unpeeled. Fed 6 adults as a side dish. This one is a keeper.

Baked Chicken Nuggets
My kids love these and I like them too. You can reheat them the next day on a wire rack in the oven. I simplified the recipe, using only Italian bread crumbs, shelf-stable parmessan, and salt. No need for the extra spices. I put the chicken in an scrambled egg wash before dredging in the dry ingredients. Then I spray the nuggets with cooking spray before baking. Less fat, but crisps up nicely.

Seminary Muffins
Tasty! My kids loved them. I used half whole wheat flour, half all purpose, plus the quick oats. Only 1/2 cup brown sugar, and about 1/2 teas salt. No choco-chips. These muffins are delicious, and the nuts add a nice texture. I used Trader Joes roasted chopped pecans. I suspect you could use a bit more banana instead of applesauce. Seems silly to open a jar of applesauce for 1/3 cup. You need about two bananas for this recipe. I put the bananas, sugar and eggs in the blender, because I don't like to find mushy banana bits. Then added it to the dry ingredients in a bowl.
