Feta Veggie Quiche

Very, very tasty. Next time will saute the mushrooms and spinach to get the liquid out. The quiche was a little watery. Had to cook longer than expected. After taking it out of the oven I let it set up before cutting even though it smelled so good we wanted to cut it right away. Will definitely make again with some minor changes.

Curried Coconut Chicken

A bit bland for our tastes. Tasted more like chicken and tomato soup. I'll try it one more time and add some garam masala and see what happens.

Creamy Carrot Soup

My first try at making carrot soup. This was absolutely delicious. Only change I made was 1 cup milk + 1 cup heavy cream instead of the full 2 cups cream.

Butter Bean Burgers

Wow!! These were so good. Took a few suggestions from prior reviews. Used chopped red pepper instead of jalapeno,2 eggs, 1/2C-3/4c Italian flavored breadcrumbs, also coated the patties in bread crumbs, and chilled in fridge for 1/2 hour before frying. I also added some Penzey's chipotle chili powder for a mild, but tasty kick. Mixture was gooey, but firmed up nicely after chilling. This will definitely be a "regular" at the table.

Spanakopita II

Absolutely wonderful. My daughter & I made this for a special dinner. Working with the phyllo definitely required a team effort, but I'm sure it gets easier with practice. May try & cut down on the butter next time, since it was dripping out as we ate them, but it was oh so yummy!!

Blueberry Cream Muffins

Good, but not great.Personally, I don't think the sour cream really changed the flavor of a typical muffin, but it's probably what saved my batch by keeping it somewhat moist. I cooked for 20 minutes & they were way overdone. Next time I'll try 15 minutes.

Pumpkin Apple Streusel Muffins

These muffins are delicious!! I did reduce the sugar to 1 1/2 cups and they were still very sweet. May cut back a bit more next batch. In any case, these were gone in a flash.

Gourmet Sweet Potato Classic

My sister-in-law absolutely hates sweet potato anything...Made this last year and she had 2 helpings!!! She already called to put in a request for this year. This will be a new traditional holiday recipe.
