Buttermilk Pancakes II

Spectacular!!!!! Light, fluffy and incredibly tasty! I have been using different recipes for many years. I usually get flat, tough and/or bland pancakes. I followed this recipe exact including cooking instructions and they were spot on. Key* mix right before cooking and DO NOT over beat!!! ENJOY!!!

Pope's Valentine Cookies

Excellent recipe just as it is. I made no changes and it was perfect. This cookie is more like a short bread than a sugar cook which I prefer because it's buttery and not sicky sweet. The cookie does stay white and makes the decorations on top look professional. I will use this recipe for all of my holiday and special occasion cut out cookies.

Eggplant Croquettes

I love these and would have rated them a 5 but steaming the egg plant gives an unpleasant texture, ROASTING IS IMPERATIVE!!! I serve them as a veggie burger. Just shape them into a burger sized patties and bake 10 mins then flip and bake another 5-10 mins. Add lettuce tomato pickle just like you would a burger. Yummy.

Grilled Jerk Pork Tenderloin

I followed the ingredients list except for the green onions because I didn't have any and I let the meat marinade for about 3 hours. I cooked it on my grill pan instead of on the grill. This was very very good. Incredible flavorful. This one is company worthy.

Garlic and Ranch Turkey Burgers

Very yummy! I read the other reviews and added about 1/2 cup of bread crumbs. They formed well and tasted great. I made sliders and topped them with spinach, tomato, avocado and a spicy mayo sauce. My 2 year old ate 2!

Chocolate Yule Log

My family LOVED this! It was rich and so decadent. The only change I made was I added 2 tbls more cocoa powder to the cake and a few tablespoons of water to loosen the batter before adding the egg whites. I might double the filling next time just because I thought it was so good and would love to have a little more.

Cranberry Puffs

These were great! I like spicy food so I added 1/2 a habanero pepper in addition to the 1 jalapeno. Next time I will add about 1/2 cup more cranberries for a sponger cranberry flavor. Big hit with my friends.
