Salmon with Tomatoes

Good flavor and pretty easy. The fish did get a little bit too cooked since I had watery tomatoes that needed to cook down. In the future, I'll remove the salmon from the pan before adding the tomatoes. Once the tomatoes are cooked down enough, I'll add the salmon back in to finish cooking. I'll make this one again.

Homemade Tomato Sauce II

This recipe is delicious exactly as written. I make it almost weekly during the winter. The sauce also makes a great base for additions. I especially enjoy adding hot italian sausage. Mmm.

Sausage Soup

This recipe is delicious as written, but it's also a great base for variations. My favorite way to make this soup is with link andouille sausage browned and sliced into coins. I've also tried red potatoes instead of pasta, chard instead of cabbage, and so forth. This soup is always delicious! As other reviewers have mentioned, the texture the following day is much better if the pasta is cooked separately and added to each bowl when serving.

Touch of Spring Muffins

Strawberries are a very wet fruit and in a light muffin like this one, they made wet globby spots with a texture similar to unkcooked batter. I had several people sample these and all agreed that the flavor was ok, but the texture was not good. If I make these again, I will use only rhubarb (chopped small to avoid huge globs) and serve them with strawberry jam.

Authentic Cincinnati Chili

I'd never heard of Cincinnati chili before I saw this recipe. While it was cooking, I have to admit I was skeptical. It smelled like a combination between apple pie and beef. As it turns out, the finished product is fantastic! I have no idea if the recipe is 'authentic' but I do know that it is absolutely delicious.

Chocolate Syrup

This was pretty good. It intensely dark chocolatey, so a little goes a long way. This recipe make a lot, so unless you use gobs of chocolate syrup on a regular basis, I'd suggest scaling down the recipe.

Blueberry Zucchini Bread

Good bread. As written, this recipe is pretty tasty, although it is very sweet as other reviewers have mentioned. I've made it with 1 cup of the flour replaced with whole wheat, 1/4 of the oil replaced with applesauce, and the sugar reduced by 1/4 cup. Made this way, the bread is still very sweet and moist. Also, this recipe works fine with a pint (2 cups) of frozen blueberries instead of fresh. Finally, this bread freezes well. Once the bread has completely cooled, slice it into thick pieces and freeze in a ziplock bag. Pull one slice out at a time and warm it in a toaster oven for an easy breakfast. It tastes just as good as when it came out of the oven the first time!

Chocolate Cake V

I've been looking for a milk-free chocolate cake recipe (my boyfriend is lactose intolerant) and I'm so glad I tried this one! The recipe is really easy and the cake is moist, fluffy, and very chocolaty. I halved the recipe for a trial batch and it made 18 cupcakes. I cooked them for about 18-20 minutes and they are delicious. I will definitely make this recipe again.

Thai Noodle Salad

The dressing was pretty tasty, but the pasta salad was only OK. If I make it again, I'll probably use chicken instead of shrimp and add more veggies. Also, I highly recommend tasting the dressing before adding salt. For my taste buds, there was plenty of salty flavor from the soy sauce. I didn't add any salt at all. If you like spice, adding a teaspoon or two of sriracha to the dressing added a nice kick.

Honey Cake III

This cake is good, but not great. It is VERY sweet and a little plain. My boyfriend and I both thought it would go well with a fruit compote if the cake itself was less sweet. One nice thing about the cake is that the texture actually improved the next day.

Fluffy Pancakes

Historically, I have not had great success with pancakes, but these turn out great every time! I use lactose free milk and canola oil instead of butter to make these lactose-free. Brush a little oil onto the skillet before pouring each batch of pancake batter. This way every pancake will be lightly browned with crispy edges and fluffy interiors. Yum!

Roasted Garlic Cauliflower

Roasted cauliflower is one of my favorite vegetables. Adding some garlic and parmesan makes it that much better. Sometimes when I make this recipe, I roast some cherry tomatoes as well. The combination of red tomatoes, green parsley and white cauliflower is gorgeous on the dinner plate.

Mystery Chocolate Cake

Ugh. I did not care for this cake. No one would eat it. Be warned that the beet taste is pretty strong. I love beets, but their earthy flavor was unpleasant in this recipe. If you do try this recipe, make sure to mash the beets really, really well. There were a few small pieces of beet in my cake that got chewy and tough after baking.

Braised Balsamic Chicken

Edible, but not delicious. I love balsamic, but the flavor in this dish just wasn't very good. I followed the directions exactly and the end result was unexpectedly bitter. Strong vinegar flavor, strong oregano flavor and dried out chicken. If I do try making this again, I will make sure to use top notch vinegar as one reviewer suggested. I will also cut back on the spices (especially the oregano). Finally, I will check the chicken after 10 minutes of cooking since the breasts were overcooked at 15. Sorry I can't rave about this recipe. I'm glad so many others have enjoyed it.

Pumpkin Gingerbread

I made this bread as written. It is delicious but VERY sweet. In the future, I will reduce the sugar to 2 cups. Also, try throwing in a few dark chocolate chips. I put about 1/3 cup of semisweet chocolate chips into one of the loaves and it was amazing!

Spanish Rice II

The flavor in this recipe is very good, but the rice turned out mushy and overcooked. Perhaps the cooking time is too long for someone cooking at sea level? I've had success with Mexican Rice II from this site (shorter cooking time and less liquid) so I'll probably stick with it in the future.

Joanne's Super Hero Sandwich

The sandwich lasted several days without getting soggy. My only complaints are that it ended up a little too salty for my taste (Next time I will use low sodium turkey breast and cut back on the meat) and that the garlic intensified over time leaving me with some serious garlic breath.

Grampa's Coriander Turkey Sausage

These sausages were great! They tasted as good as regular sausage, but without the fat and nitrates. They were easy to put together and heated up well for lunch the next day. I'll definitely be making them again.

Simple Sloppy Joes

This recipe is great! I halved the recipe, but I'll make the full batch next time. I used a little less sugar and soy sauce than the recipe called for — 2T brown sugar and 1T soy sauce for the half batch.
