Tasty 2-Step Chicken Bake

This is definitely my go-to recipe for something quick and easy. I like this recipe as it is. Nothing over the top but a decent and hearty meal. To mix things up on occasion, I sometimes use Campbell's Cream of Chicken Soup instead or will mix two tablespoons of poultry seasoning and/or garlic into the soup before pouring it over the chicken.

Honey-Glazed Pork Chops

This was a family hit the first time I made it! I followed the recipe exactly -- except I added a little bit of garlic to the mixture. Gave it a subtle kick! I think this sauce would go well with chicken too.

Gingered Pork Chops in Orange Juice

This recipe was all right. It is not a favorite, but something I would make every now and then just for something different. I have made it twice -- once following the directions as is and the second making some tweaks. The first time the orange taste was just too strong, and there was just something that didn't work for my family -- although I am not really sure what it was. We didn't really dislike it, but we didn't love it either. We liked the second go-around much better. I dropped the flour, onions, olive oil, and brandy altogether and mixed together the following: 1/2 cup orange juice, ginger, salt, pepper, 1-teaspoon sage, half a packet of Lipton Golden Onion Soup Mix, splash of red wine, and added a tablespoon of brown sugar. I then let my chops marinate in this mixture for an hour before covering them and baking them at 350 for about 45 minutes.

Cola Pot Roast II

This was a great basic recipe! As usual, I did make some minor changes as I went along though. First off I cut random slits all over the meat and then rubbed it with salt, pepper, garlic powder, and parsley. I then seared it on each side in a skillet before leaving it cooking in my slow cooker (crock pot) on low for about nine hours. In the slow cooker, I had -- the roast, one can of cream of mushroom soup, one full packet of gravy mix, one full packet of onion soup mix, and one entire can of diet coke. Instead of water, I put two tablespoons red wine, and I also added more parsley and garlic powder. I added chopped celery and baby carrots the last two hours of cooking because my family prefers them a little crisper than if they had cooked all day as well. The final result was very tender and tasty! I will be making this one again!

Honey Roasted Red Potatoes

The first time I made this I followed the directions exactly, but as many others have stated they were a little dry and bland. The second time I made them I cooked them longer as others suggested. I also doubled the sauce mixture and added a package of Lipton Golden Onion soup mix. It really did the trick!
