Chuck's Favorite Mac and Cheese

This is so good and easy. I did add a about 8 oz of velveeta but I'm sure any cheese that melts really creamy would work well. Also added about a 1/2 c. milk.

Glazed Pork Chop

I'm rating this a four star due to the simplicity of the recipe. The flavor was okay. I seasoned (garlic and onion powder) the chops a little bit before putting on the sauce and if I were to make again I'd put more season on them or try using fresh garlic and onion. The sauce did not have as much of a tangy mustard flavor that I was expecting. The sauce is a good place to start with trying out different types of mustard and sweeteners.

Sesame Pasta Chicken Salad

This was sooo good. I also reduced the oil to a 1/3 cup and might even go a little bit less. I also think the cilantro and green onions are a must, I wouldn't leave either out.

Gooey Butter Cake II

This is very simple and good. If I were to make a Gooey Butter Cake again it would be a variation of this for example Paula Deen's Elvis Gooey Butter Cake which has peanut butter and bananas.

Cream Cheese Blueberry Pie

This was really good and simple. I think the only thing I might change for next time is a little bit more cream cheese and maybe a little bit of vanilla in the cream cheese/whipped cream mix. Oh also maybe a shortbread crust.

Creamy Blueberry Pie

I'm only giving this four stars because I felt like the sour cream mixture detracted from the pie. I would definitely make this again but without the that part. The crunchy topping was good, the berries were good and amazingly my crust was good but the sour cream part was kinda yucky.

Mexican Rice III

Not great but not bad. It seems like this would be a good base recipe to add or subtract what you wanted. I made mine this time w/o the veggies but would probably use mixed veggies and more cumin next time.

Easy Chicken Enchiladas

Everyone thought that this was pretty decent. I used ground beef instead of chicken. Quick recipe if you want enchiladas at the last minute. Personally thought that they were good but with the salsa that I used I found that flavor over powered everything else.

Brenda's Pepperoni Chicken Rollups

If I were to ever make this again I'd definatly cut down the spaghetti sauce. We all found the flavor too overwhelming of the other flavors. I'd probably just lay a layer of it down into the baking dish and the put a spoonful on top of the chicken rolls. I would also remember to put the cheese in the rolls. I used the presliced pepperoni and found that there was plenty for the dish. Infact I'd probably up the amount in each chicken roll.

Thanksgiving Leftover Casserole

This is a tasty dish. The only change I made was that I used regular milk with a little less water. Oh, and I doubled the turkey, and used more that listed cheese and potatoes. If I were to make this again I'd put in a layer of stuffing or veggies or something. It turned out a little thin. This is definatly a recipe that mix and match ingredients with.

Cranberry Orange Loaf

Although I love sour things, I found the cranberries in this to be too sour. The rest of the loaf was really good and I plan on making it again but with dried crans that hopefully will not send me into super pucker mode.

Zesty Porcupine Meatballs

I doubled the recipe and these turned out pretty good. I did make a couple of adjustments though as I went along. I only used three cans of tomato soup and if I make this again as a doubled batch I'd only use two with the quater cup of Warcestershire sauce. I did double the W sauce to a half cup to only the three cans of tomato soup and did find a little too overbearing. I also only used about a tablespoon of dried minced onion instead of a quarter cup fresh. And instead of onion salt I used about about a teaspoon to a table spoon of onion and herb salt free seasoning and salt free garlic and hearb too, with a little salt put in by its self also. And also used about 3/4 cup precooked jasmine rice and did add about a tablespoon or so of bread crumbs and had no problem with the meatballs falling apart.

Candied Yams

This was great, IF your looking for the really sweet sweet potatoes with marshmallows! Of course I was, so I felt like this was a great basic candied yams recipe. The only changes that I made were that I mashed the sweet potatoes (I warmed them up in thier own juice from the cans, then mashed them adding some cinnamon and nutmeg). And since I doubled the recipe I just winged it as far as the butter, brown sugar and marshmallow went. But I did take the lid off the casserole dish the last ten minutes or so to toast up the marshmallows.

Chicken Breasts with Balsamic Vinegar and Garlic

This was a attractive and easy to prepare dish. I made it exactly how it was written except I just realized I forgot the thyme. I didn't care for the flavor of the vinager in the sauce, even as mild as it was, as much as I thought I would but can easily see how the addition of onions and other herbs would be a big plus.

Apple Crisp II

I found this recipe to be pretty good. I made it exactly how it was written but if I were to make it again i'd probably change a few things. First I used my food processor to slice the apples and I feel like the apples were then sliced too thin. When they baked they cooked down pretty far and were really, really soft. If I use this recipe again i'd either slice by hand or cut the apples into chuncks and there would be more of them, I'd completely fill up the baking dish. Also I felt like there was a lot of the crisp topping so maybe i'd layer SOME of it in with the apples. Other than that it's easy to fix and DOES TASTE GOOD.

Rich Macaroni and Tomato Bake

This wasn't great but it wasn't bad. I'm not sure where the cream mixture went to because none of it melded well. It tastes like macaroni and pasta sauce with cheese (best part) on top. It was easy though, and a good way to get ride of left overs (used left over bacon and smoked ham). I would recomend it as a quick and easy recipe.
