Baked Oatmeal II

My opinion is that the amount for two of the ingredients from the original recipe is off. I used only 1/2 cup of brown sugar (unpacked) and only 6 tablespoons of butter rather than the whole stick (half cup). With those changes, I thought the recipe was delicious. It tasted to me like a moist granola bar. I cut it into squares and had it with a cup of tea. Very delicious!

Oven Scrambled Eggs

This recipes calls for a ridiculous amount of butter and salt. I used about 1/3 cup of butter and 2 teaspoons of salt and it was still too much. Next time I would use about 2 Tablespoons of butter and only 1 teaspoon of salt. This recipe states it should be cooked in 25 minutes. Mine was nowhere near done in 25 minutes. My total cook time was 40 minutes. Next time I would bake for 20 minutes, then stir, then bake for another 20 minutes.

Quinoa and Black Beans

I have never had quinoa before and I wanted a meatless dish to have during Lent. I thought this was very delicious and filling. It was very easy to make. I followed the exact recipe, but did not add salt. I would definitely make this again. If you are on the Weight Watchers plan, it is 5 Points Plus for a 3/4 cup serving.

Amazing Pecan Coffee Cake

I thought this cake was delicious. The next time I make it, I will make it in my bundt pan rather than a 13 X 9 inch pan. I would not recommend doubling the topping, as I think that would be way too sweet.

Sarah's Applesauce

I never thought that making apple sauce was this easy. I used empire gala apples. I only added 1 teaspoon of sugar and my husband thought it was not sweet enough. Next time I will add one more teaspoon of sugar, for a total of 2 teaspoons. It was very delicious!! Thank you for sharing this recipe!!

Apple Strudel Muffins

I thought these were very good. I did add 1/2 tsp cinnamon to the batter and baked the muffins for 25 minutes. I'd make them again. NEW - Did not feel like making muffins, so I just made this as a loaf. I dropped the temperature to 350 degrees and put the batter into a 9 X 5 inch loaf pan. Baked it for about 1 hour 15 minutes. It was very good!!

Grandmother's Buttermilk Cornbread

I really like this cornbread. My brother eats cornbread a lot and he always says that you know that cornbread is good when it is not breaking up in clumps all over the place. This one was nice and moist. It would probably make great corn muffins too. Would definitely recommend this recipe.

Satiny Chocolate Glaze

Very delicious and super simple recipe. Like the previous reviewer, my favorite chocolate cake is the Hershey's Perfectly Chocolate Chocolate Cake that is on the back of the Hershey's Cocoa box. I made that cake yesterday in a bundt pan and poured this glaze over the cake. Delicious and decadent. It just does not get any better than that!!!

To Die For Blueberry Muffins

I did not make the original recipe so I am only giving it 4 stars. I made the base muffin exactly as written. I omitted the topping noted in the recipe and just sprinkled a pinch of "sugar in the raw" on top of each muffin. Very delicious and not sickening sweet.

Ricotta Cookies III

I thought these cookies were very delicious. They definitely DO NOT have a traditional crisp cookie texture. They are more cake-like. But, nevertheless, they are very moist and flavorful. Instead of lemon in the icing, I used confectioner's sugar, milk and a touch of almond extract. Next time I will try the lemon flavor in the icing. I halved the recipe and got 3 dozen cookies out of it.

Debdoozie's Blue Ribbon Chili

This is my first time making chili. I used ground turkey rather than ground beef, one can of crushed tomatoes, and only 3 tablespoons (instead of 4) of chili seasoning. The recipe does make a lot of chili. We were eating it for days. It was very good and I would definitely make it again.

Simple Scones

I have a Victorian Tea fundraiser this weekend and I decided to help make scones for the event. I have tasted scones that other people made in the past that were so dry, you were choking on them. So I decided that I would use this recipe with my first try. I thought these scones were excellent - very moist and flavorful. I followed the recipe exactly and just substituted dried cranberries for the raisins. I bought some into work to let people sample them. They got rave reviews!! So I will be making a couple batches for this coming weekend. I look forward to trying the other additions of orange or lemon rind, dried cherries and almond extract, etc. Thanks for sharing this terrific recipe!!

Spinach Quiche

Thought this recipe was very good. However, I only used 2 tablespoons of margarine and half a cup of milk and there was still WAY too much liquid for the Pet Ritz 9-inch deep dish pie crust that I used. So much wet ingredients that I easily could have made another whole quiche. Regardless, the end result was very tasty. Next time I will make two quiches using the ingredients as noted in the original recipe.

Brown Sugar Meatloaf

Made this recipe for the first time last night and will be having leftovers tonight. My husband and I both enjoyed it. I used 93% lean ground beef and also put the sauce over the top of the meatloaf. I was afraid the sauce would dry out on top of the meatloaf, but it stayed moist. Glad I put a drip pan under the loaf pan, because the sauce did run over the side of the loaf pan and would have been a mess to clean up had it fell on the oven floor. Overall, a good recipe. Would make this again.

Delicious Ham and Potato Soup

Raspberry Vinaigrette Dressing

Only giving 4 stars because I altered the original recipe. Used Raspberry Balsamic Vinegar and reduced the sugar to 1/4 cup. Everybody loved it!!

Annie's Fruit Salsa and Cinnamon Chips

I used kiwis, apples, peaches, blueberries, and crushed pineapple. Also used apricot preserves. Also made the chips. Very delicious. Really did not take too long to make. Would definitely make again.

Shrimp Linguine Alfredo

I used jumbo shrimp that I cooked separately for 5 minutes in boiling water. Then added the shrimp to the half & half/butter mixture and poured everything over the cooked pasta. Easy and good. Would make this again.
