Baked Oatmeal II
My opinion is that the amount for two of the ingredients from the original recipe is off. I used only 1/2 cup of brown sugar (unpacked) and only 6 tablespoons of butter rather than the whole stick (half cup). With those changes, I thought the recipe was delicious. It tasted to me like a moist granola bar. I cut it into squares and had it with a cup of tea. Very delicious!

Oven Scrambled Eggs
This recipes calls for a ridiculous amount of butter and salt. I used about 1/3 cup of butter and 2 teaspoons of salt and it was still too much. Next time I would use about 2 Tablespoons of butter and only 1 teaspoon of salt. This recipe states it should be cooked in 25 minutes. Mine was nowhere near done in 25 minutes. My total cook time was 40 minutes. Next time I would bake for 20 minutes, then stir, then bake for another 20 minutes.

Quinoa and Black Beans
I have never had quinoa before and I wanted a meatless dish to have during Lent. I thought this was very delicious and filling. It was very easy to make. I followed the exact recipe, but did not add salt. I would definitely make this again. If you are on the Weight Watchers plan, it is 5 Points Plus for a 3/4 cup serving.
