Egg-Free Low-Fat Oatmeal Cookies
SO great for a low-fat, egg-free recipe. I used cinnamon applesauce (only kind on hand) and that really brought out the cinnamon flavor. I have made these twice (in three days) and they have been a hit each time. For the most recent batch, I even cut back more on the sugar - 1/8 cup white and 1/6 brown. I am so happy to have found a moist, delectable, and HEALTHY alternative to breakfast breads and desserts.

Low-Fat Blueberry Bran Muffins
A.M.A.Z.I.N.G! I loved the fact there was no butter! I did use the 1 1/2 cups of oat bran (couldn't find wheat), plus I increased the vanilla to 1 1/2 teaspoon, and substituted out the brown sugar for 1/4 cup of honey like another reviewer did. Continually trying to watch my weight, I felt only a little guilt indulging in these. I didn't have any wheat flour, so just used white and it was absolutely fine.

Garlic Chicken with Orzo Noodles
The recipe here was overall a great base. I took the suggestion of cooking the orzo in chicken broth and added oregano for my spice. I diced the garlic in order for the flavor to come out more (along with adding a few extra gloves in order to prevent any blandness). I went with tomatoes instead of spinach, and found it was quite the hit. I served this with peas and corn which provided enough extra "color." It was a HUGE hit with my family; however, my one caution would be to NOT overcook the orzo. I did that a bit and although it was still delicious, that would have made a difference.
