Wedding Gift Spaghetti Sauce

Oh my! This is the WORST spaghetti sauce I have ever made! I followed the recipe exactly and after two hours my sauce looked like a thin soup. I decided to let the sauce simmer longer (for 6 hours) and it still never thickened! By that point I figured I would try it anyway hoping the flavor was good. Nope! The sauce was very acidic and the tomato flavor was very strong. I had to add some sugar to counteract the acidity and tomato taste. I also had to add more garlic and other spices to get the mix right. The only reason I rated this a 2 and not a 1 is because after my doctoring of the sauce it was edible. I will NEVER make this sauce again. If you choose to make it, I suggest using much less water (and less tomato paste), adding sugar, more garlic, less rosemary.

World's Best Lasagna

The flavor was awesome, but the sauce was a little runny. I did not have tomato paste on hand, so I am sure that accounts for the thickness.

Sausage Mushroom Quiche

Very simple to make, and very tasty. I used turkey sausage, and low fat Italian blended cheeses. AWESOME! Everyone loved it for a Christmas morning breakfast.

Easy Batter Fruit Cobbler

This recipe has great potential. I doubled the recipe because I had a lot of fruit I wanted to use. It did not cook properly, even though I left it in the oven 30 minutes longer. Next time I will double the fruit, but nothing else.

Apple Crisp II

I must agree with the majority of the people on this dessert. It was perfect! I used 8 granny smith apples and sliced them thinly in the food processor. I tossed the apples in the sugar mixture just to coat them, and omitted the water. I also doubled the crust recipe and put half on the bottom, then the layer of apples, then the other half on the top. It was wonderful! Served with cold vanilla bean ice cream and a cup of smooth coffee. Mmm good!

Italian Spaghetti Sauce with Meatballs

I really liked this recipe. I was hesitant to add the meatballs without pre-cooking them, but I am glad that I did. They gave the sauce a great flavor. Also, some of the pieces of meatball broke up into the sauce making it "thicker and meatier" as my husband says. I took this to a pot luck and there was none of it left! Served with angel hair pasta. Will definitely make again.

Mom's Best Spaghetti Sauce

I thought the recipe was only fair. It was quite bland for my tastebuds and required a lot more seasonings. I also thought it had too much tomato paste. If I make it again I will use 1/2 the tomato paste, and more seasonings.

Aunt Carol's Spinach and Fish Bake

I made this recipe tonight for dinner and it was great! I did modify it slightly thought. For the fish I used orange roughy vice cod. I had 2 lbs of fish but only one frozen package of spinach. So, I mixed 1 pkg spinach (prepared according the recipe) with 1 cup grated sharp cheddar, 1/3 cup breadcrumbs, grated sea salt and fresh grated black pepper, and 2 beaten eggs. I lined the bottom of a large baking dish with this. Then, I placed the fish on top of the bed of spinach. I sprinkled fresh lime juice on the top of the fish. In a separate bowl, I mixed another 1 cup cheddar, 1/3 cup of bread crumbs, sea salt and black pepper, and covered the fish with this mixture. I baked at 325 for 30 minutes. PERFECT!!! My kids and husband loved it too. This is a nice treat for fish dish. I served with basmati rice and a side salad. Yum!

Sun Dried Tomato Chicken

Wow! This recipe was very flavorful, and quite easy to make. Everyone loved it. I did make a couple of changes to the recipe. I cooked the chicken in some olive oil and the seasonings on the cooktop, then put the chicken aside. In the same pan, I cooked the garlic per the recipe. I used the sundried tomatoes in a jar with oil and just chopped them up. I served with a side of pasta and a garden salad. Mmmm! I will definitely make this dish again.

Golden Sweet Cornbread

This cornbread is very easy to make. I decided to make muffins out of my batter - cooked about 18 minutes. The only mod I made to the recipe was adding in a can of creamed corn. My kids love it!!

Chili Rick's

I made this chili the other night with mixed reviews. I took the suggestions of previous reviews and used the brown sugar BBQ but only 18 ounces. Other than that I followed the recipe to a tee. Some of my friends raved about it that it was the best they had ever had, and begged me for the recipe. My husband said it was unique - not good or bad, just very different in flavor from what he expects from chili. I tolerated it. I probably will not use this recipe again. Based on the results we received, you either love it, or simply tolerate it.

Throw Together Mexican Casserole

I modified the recipe a little. I did not have salsa on hand, so I added diced tomatoes. I also covered the top with low fat cheddar cheese. My husband raved about the dish, but my children were less than enamored. I thought that it was great for a quick dish!

Beef Burgundy Over Noodles

Recipe was very tasty and beef was extremely tender! I added 2 cloves of chopped garlic with the onion and beef, and used olive oil vice butter. I used a dry merlot for the wine and eliminated the browning sauce. My husband and kids loved it! Will definitely make again!
