Roasted Red Potato Salad

Oh no, no, no. . . . The taste of the sauce was good but both my husband and I did not like the texture of the potatoes. May use the recipe for the mayonnaise mixture but I will definitely boil my potatoes from here on out.

Delicious Salmon

I fixed this salmon for dinner last night. It was so good!! I baked in a 400 degree oven for 15 min. Will cut down to 12 or 13 minutes the next time I make it. The marinade is awesome. I made a second batch of marinade to baste over the salmon before putting in the over and as a sauce to go on the fish while eating. It is delicious but it doesn't overpower the taste of the salmon at all . . . It truly enhances it!

Cheesy Squash and Zucchini Casserole

This recipe is awesome. I am not a squash eater though I do love zucchini. However, I had some of both so I tried this recipe. I steamed the veggies in a microwave steamer for 7 minutes. No excess water that way and the veggies were nice and tender. The only other thing I did was to take some seasoned croutons and made crouton crumbs in the blender. I used those instead of the saltine cracker crumbs and bread crumbs. Otherwise followed the recipe to the letter. Served it with our meal with our friends last night. EVERYONE (including me)loved it. There was none leftover! Only problem with that is that it would have been nice to have had some leftovers for today.

Linda's Blue Cheese Dressing

This recipe gives the best combination of ingredients. I was attracted to it because it includes buttermilk and sour cream. I made just as the recipe was written. What a hit with our fresh salad last night. Everyone enjoyed it! Next time I may use fresh parsley and garlic (instead of the garlic powder). You can always make it lower calorie by using light sour cream and mayonnaise. But this is now MY Blue Cheese Dressing recipe. No need to look any further!

Raspberry Oat Bars

This recipe was perfect! I made exactly as directed. Perfect proportions. I sprayed a 13x9 inch pan with Pam. I pressed 1/2 of the oat mixture onto the bottom of the pan. I spread the seedless raspberry jam to 1/2 inch of the edge. Sprinkled the top with the crumbs and pressed in gently. Cooked at 400 degrees for 22 minutes and they were wonderful. They cut into perfect bars and they were not crumbly. They looked just like the picture. Great dessert tonight after a spaghetti supper and will be wonderful tomorrow morning with a cup of coffee!!

Sweet and Saucy Chicken Chili

Good recipe. My husband loved it. I do have a couple of suggestions though. It needs another can of beans . . . I used drained kidney beans. Too much sauce to beans ratio without them. And I only used one bottle of chili sauce. It was spicy enough without the extra bottle. The cranberry sauce was a unique addition to traditional chili. We loved the sweet and spicy contrast.

Broccoli Cheese Soup

Really, really good and very rich. My husband loved it. Next time I will half the recipe since it is just the two of us. It is great for a large group if you are making the full recipe. It is a filling, flavorful soup. I made it exactly as written and can't think of a thing to change.

Chicken with Stuffing

So easy and so delicious. I followed the recipe just as is except I used cream of celery soup instead of the cream of chicken. Just a personal preference. Most of my crock pot chicken recipes call for 6-8 hours on low heat so I was a little wary of cooking for only 4 hours. The timing was perfect. The stuffing was moist and not mushy. My bag was 8 oz. instead of 6 oz as called for in the recipe. I used the whole bag but didn't change the recipe amounts of butter or water (I used chicken broth instead of water). The chicken was tender enough to cut with a fork, there was plenty of gravy and the stuffing was just right. I plan to make this again and divide it into 2 dishes and freeze it so that we will have a ready casserole for 2 when we need it!!

Traditional Macaroni and Cheese

I am not sure why this recipe calls for 1 cup of water. IF I were going to use water I would use the water that I cooked the macaroni in. But instead I substitued 2% milk. I used heavy cream instead of the evaporated milk. It turned out creamy and delicious! I also added a squirt of prepared mustard which gave it just a little "bite" but you don't taste it as mustard. Grated a little onion in with the sauce as it thickened. Can't think of another thing that would make it any better. I just don't get the water. Oh well, I'll keep making this with the changes as stated. It was a really good, traditional mac and cheese!!

Honey Of An Oatmeal Bread

This bread is delicious! Easy to make and just the right consistency. I made the recipe without any changes to the ingredients. I made it in my bread machine and it was very easy. This will be my favorite recipe for bread!

Green Pea Casserole

Delicious! I substituted cream of onion soup for cream of celery soup and left out the onions. I also used 2 cups of frozen peas instead of the canned peas. The frozen peas hold up better than the canned peas and don't get mushy on you. Great recipe! Will definitely do it again.

Easy Key Lime Pie I

Absolutely delicious!! And yes, it's better the second day. 4 eggs, 2 cans of condensed milk, 1/2 cup each of lime juice and lemon juice, 1 teaspoon of lime zest and baked for 25 minutes. Perfect!!

Slow Cooker Chicken Taco Soup

OMG! This was delicious. I followed the recipe to the letter and it was perfect. I loved the taste the beer gave the soup. What a treat and so easy. I wouldn't hesitate to serve this to a crowd of people and if you want to make it hotter just add hot taco seasoning and hot diced tomatoes with chilies. But we loved it just like it is!!

Easiest Filet Marsala

Basically a very good recipe but I think it called for too much balsamic vinegar. I would cut this down to 1/8 cup. I added about 1/4 cup of chopped onions and browned them in the butter. Then I added the mushrooms followed by the wine with 1 teaspoon of Maggi Sauce. As directed I added the balsamic vinegar and reduced the liquid. I added just a bit more wine with some salt and pepper to taste and then a little cornstarch with water to thicken the sauce. My husband loved it and with less vinegar I think this will be a winner!

Southwestern Corn and Walnut Dip

I'm sorry but this wasn't very good. It makes a ton but then I had to throw out what wasn't eaten and that was a lot. I followed the recipe exactly but it certainly wasn't a hit. Too much onion and very "flat" tasting. Maybe we just aren't big fans of southwestern cuisine here in the south.

Southwestern Bake

I thought this recipe was delicious. The only reason I didn't give it 5 stars was because it was a little dry. I think it would be more moist with less tortilla chips so I will use cut back on the chips the next time I make this casserole. The flavor is wonderful and I like the combination of black beans and corn. Don't be afraid to use 1 tablespoon or more of chili powder. It really does add to the flavor. I will definitely make this again.

Corn Casserole I

I made this corn casserole today and was amazed at how good it tasted! I took it as a side dish to a friend who is recovering from surgery. Made the recipe exactly as written. It was easy to make and I am sure I will make this often.
