Baked Pork Chops I

Salsa Chicken

So moist and delicious. My husband had seconds. I marinated the chicken for about 4 hours in the taco seasoning with about a half a cup of water. From there, I followed the recipe exactly. I turned out great with Mexican Corn and black beans as side dishes.

Mini Meatloaves

I was skeptical about using the quick cooking oats, but it turned out great. You can't even tell the oats are in the meatloaves once they are cooked. I added a bit of garlic salt and some diced onion. Cooked in a muffin pan. Perfect with mashed potatoes and peas or green beans. Had enough leftover for one lunch the next day.

Black Beans and Rice

Added a can of tomatoes w/ green chiles. It was great. Served it for dinner as a side dish to the Salsa Chicken on this website. Used the leftovers for lunch the next day to make a burrito filling. This recipe makes a large enough amount to do double duty.

Banana Crumb Muffins

I too used 1/3 cup oil instead of butter as others suggested. I also used a few dashes each of nutmeg and cinnamon in the batter along with a splash of vanilla. They turned out great. The topping is fabulous. Next time I might try the butter just to see what the difference is. I think the butter might add some sweetness and enhance the flavor even more.

Jay's Jerk Chicken

The husband gave me a high five - what more can I say? Marinated over night. I used bone in chicken with the skin on. Grilled it outside on medium/low heat. The skin blackened up and really enhanced the flavor.

Buffalo Chicken Dip

Loved the taste of this. Just like eating chicken wings. When I make this again, I will try the layering method and omit the cheddar (gave the dip some oily spots).

Awesome Slow Cooker Pot Roast

I rubbed garlic salt, pepper and flour over the roast, the browned it as others suggested. Added a 10 oz can of mushrooms. So good. Serve with mashed potatoes and a veggie. Perfect Sunday dinner without alot of fuss. This will become a regular at our house.

Old Fashioned Paradise Pumpkin Pie

I made this for Thanksgiving and the family loved it so much they requested it at Christmas. The cooking time does need to be adjusted. My pie was in the oven about 25 minutes longer than the recommended cooking time. I also put the pie in the freezer for about 45 minutes before I poured in the pumpkin layer. I serve it with Pumpkin ice cream.

Black Bean and Salsa Soup

So quick and easy. I followed the recipe exactly for the soup, but garnished with tortilla strips, avacado, cheese, onion and sour cream. Will make this again.
