This was fantastic! I doubled the meat, and added minced garlic and jalepenos. I added chile powder and cumin to the meat while it was browning. I also doubled the enchilada sauce. I ran out of cheese, but I had tons of cheddar sliced cheese, so I sliced those up and put them in my cornbread. I also laid a little cheese slice wall up between my meat and cornbread mixture. I didn't have Jiffy, so I had to make my cornbread, but it was really easy: 1 cup of corn meal, 1 cup of flour, 1/2 cup sugar, 1 egg, 2/3 cup canola oil, 3 1/2 tsps baking powder, and 1/3 cup milk. It turned out so amazingly wonderful, I can't believe I made it! I'll be making this one a lot. :) And I can tell you, as I'm sitting here eating the leftovers, that it's still fantastic the next day. ;) Thanks for the recipe!
