About this Cook
I'm 58 yrs old and have been in a wheel chair for the pasted 4yrs. I have the full use of my right arm only.I live with and care some for my mother who is 81 yrs old.I still cook and clean house from my wheelchair.I have three kids 40,39,& 37 and 4 grandchildren.I use to work for a doctor as a office manager until I injuried myself and have been handicaped for 12yrs.
My favorite things to cook
Steaks, cakes, you name it I try it.
My favorite family cooking traditions
Cooking Christmas dinner. When I bake pies for weeks and put in the freezer start baking in October thats when I bake all the fruit cakes and pour brandy over them several times before they are ready to eat. We still have family and friends that love them and request them every year.
My cooking triumphs
Making a 3-tie wedding cake for my son when I had never done it before.

Persimmon Bread I
I have never had persimmon bread before and my neighbor has a tree just loaded with them each year I get some to make the cookies so this year he asked if I would make him some bread I found this recipe and my neighbor is a diabetic so I made some changes. Where you use 3cups of sugar I used 3 cups of Splenda and Ialso changed 3 cups allpurpose flour to Gold Medal Speciality Flour thats better for bread baking. I increased the walnuts to 1- 1/2cups and added 1-1/2 cups of rasins Instead of greasing the pans I Pam them. That is so good and my neighbor really likes it. Oh, so did my mom. Looks like I will be making this all the time as long as the persimmons hold out.
