Homemade Black Bean Veggie Burgers

This was a very delicious recipe that was much better than I expected due to my previous encounters with veggie burgers. I had to make a few changes due to lack of ingredients and advice from other reviews. To prevent the burger from being too wet, I dried the beans after rinsing as well as squeezed the liquid out of the veggie mix. I was low on breadcrumbs, so I threw in 1/3 cup brown rice in addition to the 1/3 cup bread crumbs I had into the food processor. I also substituted cayenne pepper for the hot sauce. Overall this turned out excellent and the patties stayed together in the oven. I would highly recommend this to anyone!

Ian's Potato-Vegetable Soup

This is a very simple soup that can easily please a variety of palettes. I didn't have the beef bullion so I used chicken stock instead. I also added shredded rotisserie chicken, extra veggies, dried rosemary and thyme and they complimented the soup well. Follow the recipe closely or experiment...either way it will be delicious.

Texas Style Chicken Tequila

I love this recipe! My husband and I have been making this for over a year and it is our favorite. It is delicious over rice or pasta. Unless you love heavy cream, I would recommend using about 2/3 the recipe amounts. For tequila lovers, use up to two times the recipe amounts for stock and tequila. It is also much quicker to put the chicken in one skillet and the veggies in another so you can cook them at the same time. A pinch of cayenne also makes a great addition.
