Chicken Tikka Masala
I make this recipe all the time. My husband and I both love it. I usually lick the plate and the pan.. I don't want any of that sauce to go to waste. I do only use one tsp of salt in the marinade and 1 tsp of salt. And I only use a little bit of cayenne. I do use hot smoked paprika because I have a ton of it on hand all the time and I find that gives it enough heat. Highly recommend. If I don't have some of the ingredients on hand, it doesn't stop me from making it. Still delicious even if you don't have lemon or ginger or cilantro. (But I really love cilantro.) I also always use greek yogurt just because it's what I always have in the fridge.

Vegan Brownies
These were so yummy! I'm not vegan, just wanted an easy chocolate delivery system and had all the ingredients on hand. I followed the recipe almost exactly. I just used an 8x8 pan instead. It turned out more like a brownie ish cake than a cakie brownie. Not crumbly at all!

Sweet Potato-Turkey Meatloaf
This is a favorite at my house. I have to be honest though, I use the baked potato button on the microwave to cook the sweet potato. Then I just peel off the skin and mash it with a fork. I really hate cutting sweet potatoes. I also put half the ketchup mixture on top and half in the meat as others have mentioned. And meatloaf sandwiches the next day are amazing !!
