30-Minute Minestrone

Super Grilled Salmon

I'm always looking for new ways to fix salmon and this recipe sounded pretty good. I used half the amount of soy sauce called for but otherwise followed the recipe exactly. My husband and I liked it very much and I will definitely make it again.

Easy Baked Chicken

My husband, who likes almost everything I make, did not like this. I didn't care much for it either...it was pretty bland. I will try it again, though, using a different type of dressing and spicing up the cornflake crumbs with a little salt and garlic powder. I will say, the chicken was tender and moist.

Tender Pan-Fried Chicken Breasts

My husband does not like chicken breasts, because they are too dry after cooking, so I usually buy only dark meat chicken. However, I had some boneless skinless breasts I bought on sale and decided to use them for this recipe. I used less of each spice than called for but, otherwise, followed the recipe exactly. They were so juicy, and the flavor so delicious, that I will definitely make them again.

Consomme Pork Chops

I made this tonight for dinner and did not care for it. I followed the recipe to the letter. The top layer of rice didn't cook and the chops were dry. I doubt I will make it again but, if I do, I will add two cups of liquid and cover the baking dish with foil, removing it the last 15 minutes. I won't cook it as long as called for in the recipe, either. I partly blame myself because, when I read the recipe, I thought to myself..."self, you should add another 1/2 cup of water and cover with aluminum foil". I didn't.

Brown Rice Lentil Salad

I made a small amount to start with because I was testing it before making for two separate Christmas parties. Both my husband and I liked it but both thought it was a bit heavy on the vinegar so I'll cut that back when I make it next time. Overall, though, this is a very good recipe.

Baked Buffalo Wings

I read the reviews before I tried this recipe so I didn't make the mistake of adding 5 teaspoons of cayenne. I followed the recipe almost to the letter with a couple of exceptions. I used a family sized package of 25 drumettes and coated them in the flour mixture the day before. They were in the fridge, uncovered, for about 18 hours. I baked them in two batches. The first batch I coated in the oil/hot sauce mixture before baking (20 minutes on one side, 25 on the other). The second batch I baked for 20 minutes, removed from the oven, basted with the sauce, turned them over, basted that side and baked for another 25 minutes. Both batches were really crispy and delicious. My husband, who doesn't much care for hot wings, loved them.

Fabulous Foolproof Lasagna

This recipe was way off as far as ingredients. It needed more of everything...sauce, meat, ricotta mixture, etc. Luckily I read other reviews and bought 2 16 oz. jars of spaghetti sauce but I didn't buy extra of anything else. If I make this again, I will use the ingredients as listed but use a smaller casserole dish. I used whole-wheat lasagna noodles and cooked them first but, other than that, I used the ingredients listed in the recipe.

Shrimp Etouffee II

I used the ingredients exactly as written except for adding 1 teaspoon of Worcestershire sauce and a bay leaf. I choose to cook it on the stove rather than the microwave. My husband couldn't quit raving about it and I loved it, too.

Filet Mignon with Rich Balsamic Glaze

Other than adding a tablespoon of brown sugar to the glaze and reducing it after the steak was cooked, I followed this recipe exactly. I did have reservations about cooking a Filet Mignon on the stovetop but once I took my first bite they were all gone! It was heavenly (my husband agreed) and I am looking forward to making this again.

Oven Fried Chicken II

Using the ingredients listed except for the thighs (I used chicken tenders)I salt and peppered each tender before dredging. Instead of oil, I used butter flavored cooking spray on a foil covered cookie sheet and then drizzled Smart Balance on top of the pieces. The key to baking tenders is a higher oven temperature and shorter cooking time. I baked at 450 degrees for seven minutes then turned the pieces over and baked for 7 more minutes. My husband really liked it.

Spinach Lentil Soup

With the changes I made after reading other reviews this was a 5 star recipe. Instead of Turkey Kielbasa I used Italian Turkey Sausage. I added minced garlic when sautéing the carrots and onion, added salt and used 4 cups of chicken broth and 2 cups water. I used brown rice which I added with the lentils and cooked, covered, on low for 45 minutes. My husband and I enjoyed it for dinner with homemade French bread and ate the leftovers for lunch today. Really delicious!

Juicy Roasted Chicken

I followed the directions exactly except for the time and temperature. I roasted my chicken at 375 degrees F for 1 hour and 30 minutes, then removed and covered for 30 minutes. I couldn't believe how tender and juicy the breast was...fantastic. Even though I usually use my rotisserie for a whole chicken, I will make this recipe again.

Roasted Pork Tenderloin

This was pretty good but the pork didn't "melt in your mouth" as advertised. It was tender but not as moist as it should have been. I cooked at the recommended temperature for the recommended time and followed the recipe exactly except for using a lot more sage and garlic salt; the recommended amount wouldn't have been nearly enough. I will make it again but next time I'll try it in my crock pot.
