Bean Soup With Kale

This soup is fantastic (I'm eating a bowlful right now). The only thing I did differently was to drain and rinse the canned beans but, other than that, I followed the recipe exactly. It couldn't have been tastier.

Mom's Meat Loaf

My 90 year old Dad said it may have been the best meatloaf he has ever eaten! You could not get a better review than that...he is kind of picky about his food.

Oatmeal Waffles

I was looking for a healthy waffle recipe and decided to try this one, using white wheat flour instead of all-purpose and adding vanilla. They were a bit heavy but very, very filling. I didn't feel hungry again for hours. I will make them again.

Best Tuna Melt (New Jersey Diner Style)

I loved it! The only change I made was one of necessity...Provolone slices instead of Swiss. Otherwise, I followed the recipe exactly. The tuna itself was so good I'll never make tuna salad any other way. Thanks for sharing.

Vegan Split Pea Soup II

This was the best split pea soup I have ever made. I followed the recipe exactly with the exception of using green split peas instead of yellow. When the soup was done, I put half of it in a blender, pureed it and mixed it back into the rest of the soup to make it thicker. The recipe says it makes 6 servings but I ate almost half of it for lunch today. It was so good I kept going back to the pot for more.

Oatmeal Butterscotch Cookies

These were great. I gave it four stars instead of five because I changed two things. I used 2 sticks of unsalted butter and set the oven at 350 instead of 375 and baked for 10 minutes for a couple of batches and 9 minutes for the rest. I will definitely make them again. I love butterscotch!

Soft Molasses Cookies V

I wanted a soft cookie and this was it. I did add more spices and a pinch of salt (hence the four stars instead of five) but otherwise followed the recipe. Rolling the balls in sugar was a great idea (from another reviewer). There is no need to press the balls down as someone did; they will flatten properly on their own. I baked for 11 minutes and they were perfect.

Curry Chicken Salad

I gave this a 5 because of the dressing and because it can be customized and still be delicious. I made it to spread on Sesame Rice crackers so I left out the onions and celery (I didn't have any on hand anyway) and added 1/4 tsp. of onion powder and a pinch of celery seed to the dressing. I had less than two cups of chicken so I only added one hardboiled egg which was plenty. When I make it for a salad, I will include the celery and green onion but probably only 1 or two eggs. Needless to say, I saved this one in my Recipe Box.

Blueberry Cornmeal Muffins

After reading this recipe I couldn't wait to try it so I didn't. I went straight to the kitchen. I took the muffins out of the oven about 20 minutes ago and ate one as soon as the blueberries were cool enough not to burn my mouth. They were delicious! The cornmeal was an ingenious touch. The only change I made to the recipe was using an additional 1/2 cup of blueberries but otherwise I followed it exactly. I will definitely be making these again.

Baked Garlic Parmesan Chicken

Chicken without salt is simply bland, no matter what else you do to it. I sprinkled salt on each thigh but next time I'll also add a half teaspoon or so to the breadcrumb mixture. I used shredded Parmesan and Panko breadcrumbs because that is what I had on hand. I'll use less breadcrumbs next time because 1 cup was too much, even after sprinkling more on after the thighs were in the pan, and the leftover had to be thrown out.

Shrimp Avocado Pasta Salad

Normally, I like to try a recipe the way it is written the first time but I needed a shrimp salad recipe and I chose this one because I had all of the ingredients except the pasta. I planned to serve it over mixed greens that already had sliced tomatoes and green onions and didn't want the pasta anyway. Just reading the ingredients in the dressing told me it had to be spiced up a bit. I added Dijon, a little Kosher salt and garlic pepper to the mayonnaise and lemon juice and mixed well. On top of the green salad I layered the shrimp, bacon, avocado and cheese then poured on the dressing, finishing with a good sprinkle of course ground pepper. It made a nice presentation and was tasty enough to make again.
