Roasted Swiss Chard with Feta

Wow. I've never had Swiss chard before so I wasn't sure how I would like this. I used 4 leaves and a large Visalia onion and cut down the olive oil to one tbsp. I tossed it with pasta and it was amazing. Just enough for two and no leftovers.

Butternut Squash Soup

Very good. Roasted 2 smallish butternut squashes cut in half at 375 for about an hour. Didn't use nearly as much cream cheese, maybe 6 ounces.

Chef John's Roast Turkey and Gravy

Great recipe to follow for our second baked turkey. Didn't add the vegetables to the inside of the turkey, just the spices. Otherwise baked the turkey as directed. For the gravy, we didn't follow the directions at all, just the ingredients (minus basalmic vinegar). We ended up needing a lot more flour than stated to thicken it up.

Chicken and Vegetable Soup

This is a super flexible recipe. We used rutabaga instead of turnip, parsnip instead of carrot, skipped kohlrabi, and added 1/3 cup of barley instead of 1/4. It was excellent.

Iced Pumpkin Cookies

These are really good cookies. I added the whole can of pumpkin instead of 1 cup, used whole wheat flour, replaced 1/2 cup flour with wheat germ, and I didn't make the glaze. They turned out bready (which I like) and aren't as sweet as typical cookies, which again I like. We aren't big sweets fans in this house so they were sweet enough to quench my sweet tooth.

Garlic Broccoli Spears

I steam the broccoli in a steamer. Don't over cook the broccoli unless you like mushy broccoli. This is tart and garlicky and yummy.

Vegan Bean Taco Filling

We loves these. If we don't have cornmeal on hand we use flour and it doesn't affect the flavor for us. I like leftovers as a cold bean dip for tortilla chips.

Black Bean Lasagna II

I love love love this recipe. I have made it more times than i can count and every time is excellent. I always leave out the corn and olives cause we don't like that in our family. I have I'd both fresh cilantro and dried cilantro, depending on what invading the house. One I left out the salsa and it was still excellent. The only slightly neg thing is that it doesn't harden until its cool, so we always have essentially lasagne soup on our plates when it's fresh from the over. It is so good frozen and re heated as well.

Bread Machine Rolls

Excellent bread rolls. I substituted 2 tablespoons of honey for the sugar and 2 tablespoons of canola oil for the butter (didn't have butter on hand). Used 2cups bread flour, 1/2 cup wheat flour, 1/4 cup wheat germ and 1/4 cup flaxseed meal, just to make it healthier. Let rise for 1 hour after splitting into rolls.

Vegetable Shepherd's Pie

This was the second time we have made this recipe. The only thing we change is using whatever fresh vegetables we have instead of frozen ones. This time it was 8 ounces wild mushrooms, 3 celery stalks, 1 extra carrot, 1/2 green bell pepper, 1 extra onion. Because of the extra vegetables we baked ours in a 9x16 and had plenty of potatoes for the top.

Baked Delicata Squash with Lime Butter

Really interesting flavors. Make sure you enough of the lime butter to the squash, otherwise it won't taste as yummy.
