Simple Baked Apples

I love this recipe! I also add vanilla extract, replace the whole milk with 1% or skim and use brown sugar splenda instead of the regular white sugar. The house smells amazing while this is cooking. I serve it over low fat vanilla ice cream and it tastes like a million bucks!

Quinoa and Black Beans

I made this as is and it is AMAZING! I like to use any leftovers and make my own burrito bowls too by adding turkey taco meat or the tofu taco recipe from this site. This recipe is a star on its own though!

Sweet Restaurant Slaw

Loved this! I cut down on the sugar by almost half because I was serving it to a diabetic. I elimated the poppy seeds because another of my guests has diverticulitis. I used Helman's mayo because that is what i had on hand. I used onion powder instead of raw onion. The only white vinegar I had on hand was rice wine vinegar and it worked great. I let it marinate overnight. It tasts like the KFC slaw we like only better and fresher!

Quick and Easy Alfredo Sauce

This was really good for a quick alfredo sauce! It didn't taste authentic to me but it was quick, easy and used up the ingredients I had in the house. I normally make a recipe using heavy cream and never tried the cream cheese before. The sauce was creamy and it didn't taste the cream cheese. I used 2% milk and ended up adding a little more at the end to thin it out slightly. I served it over penne because that is what I had in the house and it was still very satisfying.

Marinated Baked Pork Chops

This sauce was wonderful! I doubled the sauce as others suggested I uncovered the chops for the last bit of cooking. I added dried minced onion and garlic powder to the sauce just to suit my family's tastes. I served it with steamed broccoli and stuffing. The sauce tasted so good when it seeped into the side dishes on my plate. Yum!

Tofu Tacos I

This was fabulous! Exceeded my expectations. I only had plain tofu so I increased some of the seasonings to our own taste. I ate it like a taco salad and my vegetarian guest ate it in a taco and both were great. Will definitely make again!

Basil Tomato Soup

I thought this recipe was great! I made this last night for the first time. I made a few additions to suit our tastes- I added salt and pepper, a little onion powder, and a little dried basil in addition to the fresh basil. Instead of cream I used 1/2 cup half and half and half cup low fat milk. Like the other reviews said, I reduced the butter to about 5 or 6 T. Tonight we had this for leftovers and I made it even better and heartier for dinner by adding white rice (about 2 or 3 cups, cooked rice) making it a tomato rice soup and garnishing with grated cheese. OMG the rice and the cheese made it soooo good. I was just trying to change it up so it didn't feel like leftovers but from now on I am always going to make this a tomato rice soup!

Slow Cooker Teriyaki Pork Tenderloin

Very yummy! I added a whole sliced onion and a few dashes of cayenne pepper. I also added additional minced onion and garlic powder in addition to the fresh garlic for extra flavor. (I served it with steamed broccoli and egg noodles with butter, salt, pepper, fresh parsley, garlic powder and grated cheese.) I will make again!

Summer Zucchini Casserole

Fabulous! I used less carrots because that is all I had on hand. I sauteed the veggies first instead of boiling. I used more stuffing mix (more like 9 ounces) because I had to use it up (due to the additional stuffing I just added a tiny bit extra butter to it). I served this with a roasted chicken and roasted potatoes and onions. My husband hates zuchinni and he was chowing on this! I couldn't believe it. I only wish I tried this recipe earlier in the squash season!

German Apple Cake I

Wonderful! The batter was wetter than I anticipated. Maybe that's because of the amount of apples the recipe calls for in relation to batter.? I served it warm with ice cream for guests. I was told it better than apple crisp. The next day I warmed myself a piece with some caramel sundae sauce on top. mmmm!

Hot Bean Dip

This was delicious! I was making it for only 4 people (one of which is a vegetarian) so I halved the recipe. I also left off the green onions because I didn't have any on hand and used Taco shredded cheese. I will certainly be making this again! My guests requeted the recipe.

Chicken with Rice (Arroz con Pollo)

This recipe was really yummy! I made a few changes and will make a few additional changes the next time I make it. I don't have a dutch oven so I let all the ingredients boil on the stove top and then added it to a casserole dish and then finally added the chicken back in. Also, I used chicken broth instead of water at the end. Next time I will incorporate the peas, pimentos, and olives into the rice (just my prefernce) instead of putting it on top. Also next time I will marinate the chicken (maybe in Mojo) before browning it. The chicken was cooked perfectly but lacking some flavor. Overall it was really good!

White Bean Bruschetta

I served this recipe on Christmas and it was a huge hit! I added a few touches to it. I added about two tablespoons of balsamic to the mixture along with some fresh, coarsley grated parmigiano reggiano cheese. I picked up a baguette from my local Panera to make the crostini. TDF!
