Heather's Rosemary Citrus Cornish Hens

I made this today for Thanksgiving since we were only 3 for the holiday, and this was FABULOUS! The only difference was I used a whole chicken because the store marked up the cornish hens to a ridiculous price pre-holiday. I only had 2 hours to brine, and it was still a wonderful, moist and NOT salty chicken. This was a marvelous holiday meal. Other that the chicken change, I followed the recipe exactly, and all I can say is YUM! To anyone who thinks it sounds like a lot of work, it really wasn't, and SOOOO worth it! Thanks for this awesome recipe :)

Hot Clam Dip I

Took this to a BBQ this past weekend, and it disappeared in under 5 minutes once it hit the table! I doubled it, added bacon and garlic per another review, and it was a hit. Easy and fast, and a nice appetizer option for those of us who don't care for cream cheese or sour cream. Thanks for this great easy recipe!

Blue Cornmeal Pancakes

Fantastic tasty recipe, didn't have pine nuts, but didn't miss them! Oh, and just as a health note, blue cornmeal has 20% more protein than yellow, and a MUCH lower glycemic index, so for all those who are watching their diet, this is a great recipe! Worth the trouble to search out some blue cornmeal to be able to have pancakes without the guilt :).

Creamy Scallop Chowder

This was a wonderful chowder, very tasty and easy!!! Like other reviewers I added a few things - extra mushrooms, more flour, celery, corn and minced garlic - but that was for my personal taste, the basics of this one can't be beat! I did think it needed a bit more liquid, so added some heavy cream I had in the fridge- creamy heaven... thanks so much for this wonderful recipe, this is one for the favorites file!

Chops With Fruit Stuffing

This was awesome and very easy! I made this during the holidays several times when having friends over, and it was a HUGE hit. I seasoned the pork chops heavily before putting them in,and found that 2 - 3 apples only increased the yumminess. The one time I was late, and cooked them for 2 hours on high, they were still tender and delicious! Thanks so much for this wonderful winter recipe :).
