Caprese Pasta Salad

I've made these a few times and it always turns out so yummy! I haven't made it without the pine nuts because I think it makes it more authentic. If pine nuts aren't available or really expensive, I've seen walnuts, pecans or almonds used, but haven't tried it myself. I would wait to add the mozzarella until the pasta is cooler (room temp, or if it's been in the fridge for a while), or just before serving. If added warm, they start to melt. If you add it while the pasta is cold and let it sit in the fridge, it and the pasta tends to absorb the flavor of the pesto. I use fresh fusilli from the farmers market. I also add a few dashes of balsamic vinegar for a little tang and cut through that super fresh herby taste.

Panna Cotta

This was such an easy recipe and a good basis for many other custom versions. I've made it with 2% milk instead of skim and it turned out fine. I only had 2 c of cream, so used 1/2 c of half and half. I like how you can kind of "mix and match" the diary and cut back on the fat if you wanted to.

Curry-Coconut Shrimp

I followed the advice of the first reviewer about making a paste in the blender and it worked really well. Unfortunately, the flavors were a little bland. I was surprised to see no salt in the original recipe (although I added some on my own accord). My bf and I couldn't put my finger on what was missing. I would recommend as others have maybe some ginger, lime, lemongrass, or something to cut through or balance out the coconut creaminess and the spice.

I followed the recipe almost as is except omitted the rum. I did accidentally use almost boiling water, though. It was really, really good! Perfect as is!

Lola's Horchata

I found this recipe a little too watery and not enough rice flavor. I followed one of the reviewers advice and doubled the amount of milk (used 1 cup), used an extra 1/3 c of rice, and soaked overnight. Also, the amount of ground cinnamon was too much (as some reviewers had mentioned) so it didn't blend well. Next time, I would use warmed or boiled water to soak the rice in (to bring out more flavor) and use half the amount of cinnamon. Also, I would consider using a little more milk to make it a little creamier.
