Butternut Squash Soup

This was too spicy for me & my family. Next time I will omit the cayenne. I used only 1 brick of cream cheese & that seemed to be fine for thickening the soup.

Easy Sausage Stuffing

This is the recipe my family has been using for generations. As far as the chicken stock goes, the amount to be used should be based on the consistency of your stuffing - it's a judgement call. Likely 2.5 cups won't be enough, plan on more. Regardless, you won't be disappointed. This is delicious.

Roquefort Pear Salad

This is awesome! I can't wait to make it again. Didn't have guac or garlic on hand so I skipped those. Used red onions instead of green b/c that's what I had on hand. It was delicious. Can't wait to go out & get all the ingredients to follow recipe exactly. There will definitely be many, many next times.

Gerry's Chicken Enchiladas

This recipe is fantastic! I think these are better then the enchiladas we get out at restaurants. I make only two changes to the recipe. I marinate the chicken in fajita mix before cooking & I do not use the cream on the tortilla wraps. I don't miss the flavor & who needs the extra fat?!
