Double Tomato Bruschetta
LOVE making this and eating it too. Using the slimmer French breads from grocery stores usually works best, but if I don't have time to do that, I use sandwich toast and cut them into quarters. Definitely do not skimp on the fresh herbs or the garlic. Yumm

Roquefort Pear Salad
I've made this a few times and always get great compliments. Even my boyfriend, who usually dislikes fruit in salads, enjoyed this one! I use gorgonzola cheese and red onions instead, and used 1 Anjou pear (I like the softness of this pear) for 1 bag of mixed greens (serves ~4). I also doubled the dressing without doubling the oil, and caramelized the pecans with ~2 tablespoons of brown sugar and ~1 tablespoon of water. Haven't had a chance to use avocado but will be making it again soon so we'll see how that tastes!

Marvelous Mini Mexican Quiches
Loved this quiche - easy to make, and a hit at breakfast club with friends! It took me quite some time making the dough cups/making it thin and if you're a perfectionist like I am, this part will take a good 30 minutes. I also used turkey bacon (which I microwaved before adding to the egg mixture) instead of chorizo sausage, and substituted fresh jalapenos instead of the green chiles. Not too spicy and has great flavor!
