Spinach Brownies

I've made this twice as a dish to pass for appetizer parties. It was a hit both times. The second time I added 1/2 cup of chopped bacon, so I didn't add additional salt and I reduced the butter by half. GET CREATIVE with this recipe...it's very forgiving! I've used Havarti cheese instead of Mozzarella and added minced garlic. It was delicious.

Real Homemade Tamales

Perfect tamale mixture! I tripled the recipes and used this tamale spread for all kinds of tamales, from sweet potato & chorizo to traditional chilchen & green chile.

Crunchy Cucumber Rounds

These were a hit at my New Years Eve party. I was looking for something light to counter balance all of the heavy traditional appetizers served when it's cold outside. I was concerned that the mixture would be too runny so I substituted softened cream cheese for the sour cream and it worked beautifully. If you allow the cucmbers to "dry out" a bit after slicing its easier to keep the mixture on the top with no trouble. One of my friends suggested slicing the cuke a bit thicker and then scooping out a sight divit from the center with a melon baller. Personally, that sounds like too much work when you're preparing mulitple appetizers for a party. :)

Chicken Breasts in Caper Cream Sauce

This entree was delicious! The capers added jus enough salty kick that even my fussy boys who don't like sauces ate most of their portion. Keep this one in your recipe arcenal for unexpected dinner guests, it was super easy.

Sausage Rolls

I had high hopes for these bites, but these tunred out oh "eh" for me. I didn't get the greasy factor that others commeted on, however they were lacking flavor. Perhaps it needs an additional flavor packed ingredient in the filling. I may play around with the recipe and report back.

Banana Banana Bread

I love the fact that this recipe has soooo much banana flavor. Biting into Banana Bread that just tastes like bread is, well, disappointing. I made this recipe into muffins. Like others, I added vanilla. Other alterations ~ I didn't have quite enough banana (only had 4) so I added enough cinnamon flavored applesauce to make up the difference. I also topped the muffins with chopped pecans. Delicious!

Cake Balls

Excellent way to use up leftover cake!! Any time I make a cake that requires me to sculpt or shave off portions of cake, I'll make these cakes balls with the leftovers.

No-Fuss Rice Pudding

I was searching for a rice pudding recipe that used instant rice (since that was all I had onhand), but didn't like the recipes I found. So I thought I'd try this one with cooked instant rice... success! By using instant cooked rice this can easily be a weeknight dessert - adding only an extra 5 minutes to cook time.

Awesome Ham Pasta Salad

I love a sweet, creamy pasta salad and this recipe fits the bill. I made this for 4th of July Weekend and it was a huge hit! We had several picnics planned and I had 2 lbs of ham to use so I doubled the recipe, it doubles nicely and filled a plastic 5 qt icecream tub. To satisfy picky eaters, I subsituted elbow macaroni and used onion powder instead of red onion. I took the advice of another reviewer and used pickle relish; for fear of the salad getting too 'pickle-y' I only used about 12 oz of relish in the doubled recipe... you can always add more but you can't take it out! :)

Asparagus Side Dish

I made this side dish for Easter dinner to accompany a honey citrus turkey and au grstin potatoes. It was a wonderful additional to the meal! My adjustments: I sliced carrots lengthwise and added them with the asparagus. I grated Dubliner Cheese instead of parmesan for a little extra kick. I'll definately be making this again!

Fried Cabbage II

This recipe was AWESOME. Like one of the other reviewers, I also used to leave the room when my mom made cabbage. I ended up with a head of cabbage from a neighbor's garden, and this recipe was the perfect solution to using the whole head. I did a rough-chop of the lettuce for more texture. Also I only had ricewine vinigar, but the end result was fantastic! I will definately make this again.
