Tomato and Bacon Pasta Bake

Really good! I knew my husband would want more meat than just that little bit of bacon so I only used 12 oz of pasta and added one pound of browned ground beef. I sauteed the onions and also 3 minced cloves of garlic with the meat. Some others complained of it being bland or dry so I doubled the tomato soup and then accidently used 2 cups of milk instead of 1/2 so I added a 3rd can of soup to balance out my mistake. I also used more cheese. I mixed the soup, milk and most of the cheese together before mixing with the pasta and meat. With the proportions I used this easily made enough for 6-8 hungry adults. I also saved the crispy bacon for the top of the casserole with the rest of the cheese that went under the broiler he lat few minutes.

I loved it. My husband didn't like it all but he has not sense of adventure. I sent some leftovers to my neighbors who also enjoyed it. Followed the recipe exactly. I used brown rice and also added some fresh chopped cilantro on top.

Cranberry Orange Bread

Love this bread! I made it exactly as stated but chopped the cranberries with the walnuts very coarsely in the food processor. It is a hearty, nutty bread and with only 1 egg and 2 Tablespoons of butter for the whole load it must be pretty low fat per slice. Super easy to make!

Turkey Tenderloins

The whole family ate this including 3 meat-hating children! So easy, healthy and fast. I only had an hour to marinate and there was plenty of flavor. I used turkey breast "filets" - thicker than what I would consider a cutlet but not what I would consider a tenderloin. There were 3 filets in my 1.25 lb package. I broiled for 7 minutes on each side which was perfect. I also used poultry seasoning rather than rosemary since rosemary can be so strong. This one is a keeper for our family!

Cha Cha's White Chicken Chili

I rated it 4 out of 5 because 4 out of 5 people in my family ate it! I skipped the jalapenos, cut the cayenne in half, added 1/2 tsp of chili powder and pureed 2/3 of the beans. Also used 1 1/2 cans (14 oz each) of low sodium chicken broth and salted to taste. It was very mild but very tasty. I could have handled it spicier but with 3 small kids I needed to keep the heat down.
