Swiss Sherry Chicken

I substituted white wine since I didn't have sherry, left out the dill and used bread crumbs instead of croutons. I also added fresh mushrooms. It was delicious! I will make this again!

Chocolate Zucchini Cake III

I made this exactly the way the recipe read and it turned out delicious. It's very dense and chewy, which is how chocolate cake should be....I'll be making this again!

Ground Turkey Casserole

Slow Cooker Taco Soup

This recipe was extremely salty...I think it was because I added a cheap package of taco seasoning to the mixture in addition to the meat. I probably won't be making this for a while.

Slow Cooker Dump and Go Cheesy Chicken

My family did not like this recipe. I made it with two cans cheddar cheese soup and one can cream of chicken, and like other reviewers, I seasoned the chicken before I added the soup and milk. It was very bland and tasted like cardboard....definately needed something. I will not make this again.

Spaghetti Carbonara II

My entire family loved this! I changed the spaghetti to linguini because the flatter noodles hold the sauce better. I also cooked the onion with the bacon. After I removed the bacon, I added extra garlic and the white wine which nicely mixed in the bits of cooked bacon on the bottom of the pan. I also doubled the amount of bacon and mixed the eggs and cheese together before mixing into the pasta. My husband loved this and both my boys (picky eaters) cleaned thier plate. I'll be making this again!

Slow Cooker Chicken and Dumplings

This recipe was very easy and both my children, who have very different tastes (I can count on one hand things they both will each) loved it. I was amazed at how tender and juicy the chicken was. I used the onion, chopped two stalks of celery, one can of biscuits and added three chicken bullion cubes to the water. Next time, I'm going to add frozen veggies during the last hour of cooking. This is now a family favorite!

Flat Iron Steak with Balsamic Reduction

I must say the balsamic vineagar is very strong, almost too strong for the meat. I added mushrooms and onions to the vineagar mix which ended up being the best part. I also agree with another reviewer, four minutes on each side isn't enough...of course it does depend on the thickness of the steak. I served this with baked potatoes and putting the balsamic mixture/onions/mushrooms/ was the best part. I'm not ready to give up on this recipe, but it needs some tinkering.

Pineapple Ham and Rice

Very quick and easy! I made the rice ahead of time, then dumped all the ingredients in the casserole dish. I used prebaked chopped ham. Based on previous reviews, I drained the canned pineapple and it turned out perfect. Plus, I have two very picky kids and they both cleaned their plate. My husband had two helpings, so I'm adding this to my list of easy dinners to make.

Grilled Peaches

For people that are looking for something thats not over-poweringly sweet, this is it. It's different, but very good. I also recommend that you make it only if you like blue cheese. I used fresh peaches, and like another reviewer, cooked them in the oven at 350 degrees for 10 minutes, turned them over for 4, then put more balsamic mix on them and broiled them until the sauce was bubbling, maybe about 4-5 minutes. Then, I took them out and put the cheese on them. The peaches still end up very sweet, which is offset by the blue cheese, or gorganzola, which I used instead. I will make these again.

Easy Asparagus

I think this recipe was good, but I would recommend allowing the asparagus to cook a little longer. It has some interesting tastes. I added more garlic, pepper, salt and lemon pepper than it recommended, and it made it better. I agree with other reviewers that the crackers were a little weird. All in all, a decent recipe and I'll continue to make it with a little tinkering here and there.

Texas Ranch Potato Salad

WOW! I served this during a family Memorial Day dinner and everyone loved it, and requested seconds. I took it to work for lunch, and it was still really good. I didn't cook the bacon in the microwave for as long as the recipe said, I put it in for six minutes, and it was perfect. The bacon makes the salad!

Black Bean and Corn Salad I

Very tasty! I used green instead of red peppers, and oregano instead of cilantro. We ate it with tostito chips. I also imagine it would be good with guacamole and sour cream, however, then it wouldn't be as healthy. This recipe does make a lot, you could cut it in half and still have enough as a side dish for dinner.

No Sour Cream Beef Stroganoff

I really like this recipe! I omitted the mushrooms because my children don't like them. Like another reviewer, I also increased the beef broth to one cup. I also didn't have any cream of mushroom on hand, so I used cream of golden mushroom. I served it over egg noodles and both kids including a picky eater ate it!

Scallops and Asparagus Stir-Fry

Like other reviewers, I also used flour and olive oil. Also, I didn't have any soy sauce, so I used white wine, substituted yellow squash and red peppers for mushrooms. I also added the veggies in before adding the sauce. The mixture didn't thicken up, but it was still really good served over brown rice. The asparagus (I used fresh) and cherry tomatoes made it surprising good. I'll make this again!

Broccoli Casserole III

I ran out of broccoli when I made this, so I did like some other reviewers and added a 10 ounce bag of stir fry veggies. It was a hit at a family dinner. I also didn't bother with chilling the cheese and/or draining the broccoli on paper towels...it turned out great!

Barbeque Beef Casserole

I followed several of the recommendations other reviewers provided and it worked really well. I doubled the BBQ sauce, didn't drain the tomatoes, and drained the meat before adding the veggies. One problem I had was getting the corn muffin mix to spread evenly, there were places it was really thick, and places with a very thin layer after I took it out of the oven. This is probably my fault for dropping great big spoonfuls on the meat mixture. I would also say to watch the timer....I only cooked it for 20 minutes and the top was very brown. Overall, it was a great recipe. My husband added grated cheese and sour cream on it after it was baked. Excellent recipe!
