Chicken Breasts with Balsamic Vinegar and Garlic

Both my husband and son enjoyed this recipe. There were a couple of changes I made, and I will make more for next time. I used minced garlic instead of cloves. No problem there. I served it over spaghetti--but with that there wasn't enough juice. Next time: add more chicken broth. Use salted broth or lightly salt chicken. I'll reduce the cooking time of the chicken--it was a little overdone by keeping it warm while reducing the sauce. Because of the quick cooking time and the wonderful flavor, we will use this again.

Vanilla Crepes

Yummy! We used whole wheat flower (King Arthur white whole wheat) and the complete eggs. Mine came out a little thick and pancakey. Next time I will turn down the heat a little. This said, my son actually ate them with bananas in yoghurt with whipped cream and powder sugar.

Kettle Corn

This is a hit with my son (and me!). I tried all the suggestions others gave me, but here is what I did to make it perfect. 1. I use a whirly pop. Saves clean up and never burns 2. I do three test kernels, even though whirly pop says not to. 3. I start on hi (perhaps my flat top electric range is cooler than others), turn it down when it really takes off, and take it off the stove as soon as it gets too full to turn the knob. Yummy!

Lemon-Pepper Salmon

We just made this again, using sea scallops instead of Salmon. I use petite diced tomatoes (canned) instead of fresh, which allows for more juice. I leave out the water. Also, I leave out the cilantro because I don't like it. I really believe the couscous is such a great addition. We used the 5-minute Hodgkin Mills kind and it worked fine. The only problem is we eat it too fast! Thanks for the yummy recipe!
