Chicken Tagine

Fabulous! I cut the spices a wee bit, since I was serving to a little one. Also added about a quarter cup of water and used dried mango in place of the apricots, since I didn't have any on hand. Delicious, and even the 20 month old asked for more! Thanks for a great recipe!

Three Cheese Garlic Scalloped Potatoes

Made this today for Easter Brunch. I did make these changes to minimize the fat content. Doubling the recipe, I used about 10 potatoes, 4 cloves of garlic, used 3 cups of 2% milk instead of the heavy cream, used half the amount of each of the three cheeses called for (cheddar, provolone, and parmesan) and no butter. They turned out great! (And will be replacing the old traditional recipe I've been using for ages!!) (5 stars from me, with these changes)

Orange-Ginger Tofu Triangles

Avocado Chicken Stir-Fry

This was delicious! I left out the mushrooms and used only 1 bunch of onions, since that's all I had on hand. Just before serving, I tossed with Chuka Soba noodles. Fabulous!

Yam and Apple Casserole

Delicious! I used about half of the brown sugar and substituted pear juice for the apple juice since I didn't have any apple juice on hand. Very good recipe, and perfect for this fall weather! Thank you, Vegas!

Salmon Pasta Salad

I had no dill, so substituted Italian seasoning, and used Olive Oil for the vegetable oil. This was very good as a salad, but even better later, when I served up some leftovers without the cucumbers and lettuce, topped with some fresh mozzarella and warmed in the microwave. Next time I have leftover salmon, it'll be in this recipe and served as a casserole!

Healing Cabbage Soup

This was excellent! I didn't have stewed, Italian tomatoes, so used a can of diced tomatoes and added about 1 1/2 -2 teaspoons of Italian seasoning, along with an extra teaspoon of dried basil. Topped with a sprinkling of fresh grated parmesan cheese and served with whole grain bread. Thanks for a great recipe!

Lentil Soup

Thank you for this excellent soup recipe! Hearty, delicious and so quick and easy to prepare! Only changes I made were: I used generous measurements of basil and oregano (about one and a half times what's called for) and I served over a bed of fresh spinach leaves. (great way to get those greens while adding more texture, without having the spinach turn mushy). Served soup with a crisp green salad and some whole grain bread. Perfect for a chilly, late winter evening!

Decadent Pumpkin Muffins

These muffins are fabulous and this recipe will replace the one I've used for years! My changes: used only three whole eggs, no additional whites; soaked raisins in about 1/2 cup of warm water, and didn't add more water; used only about 1 1/4 cups white sugar and added chocolate chips (of course) to half of the batter. Baked in mini-muffin tins for about 10 minutes. (made nearly 7 dozen) One thing I noticed - which my be helpful to others - After they'd cooled completely, I put them in little sandwich bags for delivery to others or the freezer. The next day, a couple of them were a wee bit soggy. They are just SO moist! Problem solved by blotting the tops with a paper towel. Next batch, I will let sit out for a few hours before bagging them. Great recipe, and thanks for sharing!

Vegetarian Korma

This was very good! My only changes: coconut milk instead of cream; cooked potatoes a little longer in a bit more water; no curry, but used garam masala and tumeric instead, about a teaspoon each, and added a generous handful of chopped fresh cilantro right before serving. mmmmm... delicious! Thanks for sharing a great recipe!

Moroccan Chickpea Stew

This was delicious, and a great way to use kale! I used only one potato, subbed chicken broth for tomato sauce, used chopped fresh tomatoes instead of canned and added more chopped garlic and cilantro. Only other change I'll make next time is to double the recipe!

California Grilled Veggie Sandwich

This was excellent! I was looking for something meatless for tonight and this is what I happened upon, and am so glad to have found it! Thank you Heather! My changes: I used generous slices of a hearty whole grain bread; added tomatoes and basil to the veggie mix and marinated in olive oil and balsamic vinegar for about 30 minutes, then baked veggies in a 400 degree oven for about 20 minutes. Assembled sandwiches according to individual veggie preferences, topped with a wee bit more feta and put under the broiler just long enough to melt the cheese. Served with a caesar salad. Delicious! This is about to become a staple in my house!

Addictive Sweet Potato Burritos

Just discovered this recipe and they are great! My changes : black beans instead of kidney, a little less water, olive oil place of vegetable oil, and threw in a handful of chopped cilantro! (gotta have cilantro!) Served with a tossed green salad. Froze the leftovers in individual servings. though I don't expect them to last very long! Thanks, Karena, for a delicious and healthy recipe!
