Mulligatawny Soup I

Great recipe| I adapted it to a low-fat vegetarian soup by: using using only a few tsp of butter to fry the onion, putting a small dollop of fat-free sour cream on top instead of cream, and replacing the meat with vegetable borth and vegetarian mock-chicken pieces. Delicious and filling!

Refried Beans Without the Refry

Awesome! I used all black beans and replaced six of the nine cups of water with vegetable broth - and it turned out amazing. I used garlic powder (which didn't add much taste) and would have preferred more cumin. But all in all - best refried bean recipe ever!

Basic Rye Bread

Delicious! It is a perfect sandwich bread, and is wonderful with hummus or tofu spread. I didn't have any seeds to add but the flavor was fantastic all the same. I definitely will be making this bread again!

Cinnamon Cranraisin Bread

Fantastic! As the other reviewers suggested, I added 2 heaping Tbsp of sugar and a little bit of maple syrup. I also used 2/3 of a cup of whole wheat flour. I added the raisins (I didn't have craisins) in with all the other ingredients in the beginning and it turned out fine. Suggestion: don't take the bread immediately out of the bread maker when the time is up. My bread came out slightly uncooked, but I returned it to the bread maker to sit in the heat for a few hours, and it finished cooking. The result was a slightly sticky, moist, delicious bread.

Broccoli and Cauliflower Casserole

Yummm! As suggested by other readers, I used brown rice and doubled it's quantity (1 cup uncooked). I used crushed Breton crackers on top... delicious! It made for fantastic leftover the next day and the crackers, even if they were soft, were very tasty. I will definitely be making this again.

Easy Morning Glory Muffins

Really delicious! These are a great way to start the day. As others had suggested, I reduced the sugar to 1 cup, but I still found these muffins a little too sweet, perhaps 3/4 cup would have been fine. I only had 1 1/2 cups of grated carrots, and I added sunflower seeds since I didn't have any nuts, and threw in a 1/4 cup of pineapple. I think that next time I will follow the advice and put half oil and half apple sauce, since the muffins glisten with oil. However, absolutely delicious! I was able to make 18 regular size muffins.

Vegetarian Chickpea Sandwich Filling

Delicious! Simple, easy and a nice alternative to egg salad sandwiches. I omitted the onion and added 1 big chopped dill pickle instead of fresh dill. Great for a light supper or snacks.
