Bean, Bacon and Pepper Soup

This soup is unbelievably good! The whole family, kiddos too, absolutely loved this- that is a rarity in this house! I was short on veggies, only had one onion, and two stalks celery. I doubled the recipe anyways and added an extra can of beans. I mixed three cans of beans; black beans, mixed beans, and cannelini beans. Everything else I did as called for in the recipe and we served it with some crusty bread! Scrumptious! Thanks a ton for this one!

Chocolate Chip Banana Muffins

So fantastic and super easy to make too! I had to change a bit because of lack of ingredients. I used sour cream instead of yogurt, and only had one banana so I added applesauce instead. For calorie purposes, I used half the amount of oil and substituted more applesauce! They were gobbled up like lightning, so moist and yummy! Thanks!

Split Pea Soup

So delicious and I have two kiddos and a husband, all fairly picky eaters- they all ate it and loved it! Wow, this is a keeper for sure, followed the recipe except used chopped cooked smoked ham and added it with the carrots. (I have a weird thing with using bones) Anyways, I also added some garlic gotta have garlic and omitted the potato- ! It was so hearty and yummy- served with some crusty bread, done deal! Thanks again and couldnt have been easier!

Sour Cream Coffee Cake

I made this recipe and it was awesome! I used a bundt pan and used the strussel filling as a topping instead- It was so moist and delicious- keep it wrapped tight because it did dry out within 2 days! Next time I will freeze half immediately- We really loved this recipe! Thanks

Chicken Florentine Casserole

Potato-Topped Meat Pie

This recipe is awesome except for two things I did differently. The meat mixture became too dry as listed so I divided the can of mushroom soup in half and use 1/2 cup milk in each of the meat and veggie mixtures. I also added 3T ketchup and 1/4 cup chicken stock to the meat mixture. Otherwise, super easy and delicious for whole family! I used a frozen peas and carrots mixture and then frozen corn. I made instant mashed potatoes and made them oober garlic-y. Oh- I also topped it with a bit of edamer/parmesean cheese cause thats what I had on hand- sosooooooo yummy!

Easy Seafood Fettucini

Simple Beef Stroganoff

Really simple and nice flavor- a bit creamier than I needed, next time will add more mushrooms and less or no cream cheese-I also thought it was a bit bland for my tastes and added some worsteshire and salt- way better for me that way! Whole family liked it though! Will definitely make it again with those changes.

Tortellini Carbonara

Yummy, really rich, I even used a oat-based cream substitute! I had to add some flour to the sauce as it was a bit too thin even after waiting extra long for the thickening process, but all in all it was a big hit with the family, kids included!

Chicken Enchiladas V

Awesome dinner that even the picky kiddos ate! I added a jar of salsa to the soup mix for some more flavor, shredded the chicken after microwaving it with cumin, garlic, onion and chili powders. Next time I will not add so many onions for the kids, but we loved them in it! Thanks- super easy too!

Apple Spice Cake

My whole family loved this cake and it was gone in one day! I upped the apples and used 4 medium sized and made a crumbled topping with flour, butter, cinnamon, and brown sugar- It was fantastic! I also used a bunt pan instead- super moist!

Cathy's Banana Bread

I finally found the best banana bread recipe ever!!!! This was so easy, and turned out perfectly! I used some of the recommendations from other members like using mostly brown sugar instead of white, I used 5 bananas, 3 smashed and 2 chunked, and made a crumb topping with brown sugar, flour, butter and cinnamon (recommended by another member) and I think that really makes this bread awesome. I also added 1 tsp. cinnamon to the flour mix. I greased the pan and then dusted it with white sugar and cinnamon. Thank you for this great recipe and great tips too! I have now made it low fat by replacing the margarine with no sugar added applesauce plus 1T. veg. oil and we thought it was even better this way!

Focaccia Bread

Wow- my first ever bread baking experience and it turned out awesome! I used special bread flour and it was so light and fluffy and crispy on top- the cheese really makes it great and the kiddos loved it! We served it with chili and it was great for sopping up the leftovers! Thank you for inducting me into the world of breads!
