Blueberry Streusel Muffins

This recipe worked well with a 50/50 white/whole wheat flour mix. I just added a bit more milk (2/3 cup total) so that they wouldn't be dry due to the addition of whole wheat flour. Also added some nutmeg to the streusel topping. Loved them!

Mom's Coleslaw

I do not like coleslaw, but I buy coleslaw mix for other cabbage dishes. I had some left over coleslaw mix, and made this dressing (scaled to 2 servings) to mix in so that my husband could have coleslaw with dinner. He loved it! You know that a recipe is good when the person making it doesn't even like or try the dish, but the intended eater loves it. As a coleslaw hater, I give it 5 stars!

Black Bean Soft Tacos

We call this "sloppy beans" & We love this recipe, although we aren't too strict on what gets added in or taken out. We like to add whatever fresh veggies we have lying around, especially peppers, and we'll eat it as a burrito in tortillas with quinoa (we've replaced rice with quinoa in our diets). My boyfriend is convinced he does not want canned tomatos in it, although we haven't tried it yet, but he'll do salsa, which is very good in it.

Crispy Barbequed Tofu Slices

We LOVED this recipe! My boyfriend was a little hesitant, but I insisted we make it. We didn't freeze the tofu first(no time), but it turned out wonderful anyway. while we were slicing the tofu, some of it crumbled into little "nuggets" and we cooked these up too with the rest. They were my favorite part! Might make this recipe with chunks in the future. We didn't need any more bbq for dipping because it was perfect as it was. Cooked mainly as written aside from using entire egg, and adding 1/2 tsp seasoning salt to the flour instead of table salt.

Lentil Soup

We really liked this recipe. We made it almost exactly as written, except for using one large fresh tomato (needed to use it before it went bad) instead of the canned tomatoes. We tried to eat after one hour, and was not ready yet, so I recommend cooking it for 2 hours. Only reason I didn't give it 5 stars is that my boyfriend prefers to eat all soups cold, and this soup was not very good cold.
