Ham and Brussels Sprout Bake
I rarely rate recipes I try here. But this one I felt compelled. I loved it. I am not a big fan of Brussels sprouts but am trying to learn. This made me a believer. I followed the recipe pretty closely but followed other recommendations and halved the oil, doubled the ham and sauerkraut. I didn't have asiago cheese so I just used Parmesan. I also used more bread crumbs on top but used pinko bread crumbs for extra crunch and put a little extra cheese in the with bread crumbs. I baked for 35 minutes. Absolutely perfect!

Slow Cooker Chicken and Dumplings
This has become a family staple. I make some changes to make into a heartier single dish dinner- I buy thin-cut chicken breasts, season both sides, and put in first. I use 1 can each of cream of chicken and cream of chicken with mushrooms, add fresh crushed garlic, frozen mixed vegetables, and a can of mushrooms. I use chicken stock to cover (not water) and add additional spices- some paprika, montreal chicken seasoning and chili pepper for a subtle kick (not too much with the kids:)I shred the chicken right before i add the biscuit dough- one large can- put in about 90 minutes before serving. I cook it all on high for 6 hours. Delicious! I get asked for copies of the recipe every time I serve to guests- and my kids ask for seconds!

Jimmy Dean Hearty Sausage Mini Quiches
I love this recipe- very quick and easy. I was able to customize each cup for each person without doing a lot of work. I did saute the hash browns and veggies together, did the meat on the side of the veggies so I could do a veggie option, or mixed (I used turkey kielbasa and chorizo) before I put into the cups- and they were all tender and very flavorful. I did not use baking cups. Instead, I smeared butter in the inside of the cups so the wouldn't stick, and they came right out. Very light and fluffy. Will become a staple!
