Asian Pork Tenderloin

Fantastic recipe, of course I added: fresh ginger and cilantro. The hubby called it a winner. Sauteed zucchini and shitake mushrooms, added sauce to veggies (from pork loin) and served over soba noodles...FANTASTIC!

Slow Cooker Carnitas

OMG...I am seriously slapping stomach is so happy that I can't see straight! Made changes (duh!): tripled spices, doubled salt, and kept bay leaves the same...oh, cooked for an hour in pressure cooker doubling broth. Sooooo good...this is going into my recipe arsenal!

Laura's Unbelievable Chicken and Pasta

I used what was on hand. I didn't have chicken breats, so I used 1 lb of ground turkey. I added mushrooms, onions, and garlic. Instead of tomatoes, I used sundried tomatoes. It was awesome. My son ate 3 helpings. This is a keeper!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

AWESOME!!! The whole family loved them! I did subsitute, because of things on hand. I used half of the lime juice for the fish, and marinated it for only 1 hour. I didn't have chipotle in adobe sauce, so I used chipotle seasoning, and added water instead of adobe sauce. I used nappa cabbage only (as said in the submitter's note). I didn't have fresh cilantro, so I used dried ( will use fresh next time). I used half of the panko crumbs and only 1 egg. It still worked. This is a very forgiving recipe. LOVE IT!!! I will make again and again!!!
