Dry Ranch Style Seasoning for Dip or Dressing

Creamy Summer Crab Dip

I made this for the first tailgate of the season and it's a good base for a delicious crab dip. I added Old Bay Seasoning, black pepper, and a diced fresh jalapeno.

Mom's Fabulous Chicken Pot Pie with Biscuit Crust

Delicious! The biscuits were a little gooey on the bottom, but it just made it like chicken and dumplings every few bites. Good recipe!

Creamy Chipotle Chicken

This turned into two absolutely delicious meals! I added the entire can of chipotle peppers (I love the heat) and served it over pasta. I used the leftover sauce to make more crockpot chicken the next day, adding an entire diced jalapeno and more chicken stock to make chicken enchiladas. As others have stated, the butter is not necessary at all, nor is all of the cream cheese. Great recipe!

Grilled Salmon I

Very good! I cooked the salmon in a cast iron skillet, added all of the marinade. Then I added mushroom and red wine vinegar (it was lacking some acid for my taste) and turned the marinade into a warm dressing and served it all over spinach with sliced mango.

Oatmeal Cocoa Macaroons

I made a bachelorette's version for the single gal or anyone really with ingredients found more typically in the average kitchen but still needs a quick fix of sugar. I used 3/4 c margaine instead of shortening, quick-cooking oatmeal instead of rolled oats, nestle hot cocoa mix w/ marshmallows instead of unsweetened cocoa, and then subseqeuently reduced sugar (which was just ultra fine, not white) to 1 1/4 c. Turned out great! Oh I also ran out of oatmeal so I threw in Cheerios so it wouldn't be so runny and didn't have any coconut so I didn't use any. :o) Moral: The basic recipe is very good and can be innovated to fit your needs/wants.
