Angela's Awesome Enchiladas

Nice and easy recipe. I used 2 cans of soup and a little extra sour cream. I don't care for enchilada sauce so I used a can of tomato soup and mixed it with salsa. Everyone loved it. You can also easily make this with beef (I used ground beef one time and steak another and grilled pork another). Just substitute cream of mushroom soup for cream of chicken. I'm thinking of trying it with shrimp as well and maybe some cream of celery or the shrimp bisque soup. At any rate, it is easily adaptable and a crowd pleaser. I'm thinking it would be good with the reduced sodium soups since you have the taco seasoning in there too.

White Chocolate Fruit Tart

I made this twice. The first time I used a pastry blender to make the crust by hand. I added some crushed walnuts. It held up better for longer. After 3 days, the crust was still nice and crisp/flaky. It was good made with the mixer, but didn't hold up as long. I used a variety of fresh fruits including berries, grapes and fresh pineapple. I just bought pineapple juice. The second time I made it I also added a little almond extract to the white chocolate/cream cheese mixture. This is a great and easy recipe that will surely please the most picky guests. I would highly recommend it!

The Old Boy's Strawberry Pie

My husband used to bring me a raspberry pie that was made by a local caterer and sold in the store where he works. It was very similar to this strawberry pie. The raspberry was always a special treat, so I was very excited to find this recipe. The consistency and flavors blended fabulously. I used some frozen strawberries (thawed and patted dry) that I had picked earlier in the month. I used brown sugar instead of white sugar for the crumb topping and I didn't sprinkle any extra sugar on top. It turned out perfectly. I shared it with family and co-workers. They all loved it. I will definitely make this again.
