Poetic Pumpkin Pie

Quite delicious. My husband has never been a fan of traditional pie crust, so the graham cracker crust made him happy. Also, we normally use non-dairy whipped topping, so I did add slightly more sugar and vanilla to the whipped cream -- it went over great. Thanks for a great recipe!

Downeast Maine Pumpkin Bread

Bound to be a new family favorite. Simple, without being bland. Flavorful, without being spicy. Just perfect. Went with the two 9 x 7 pans option, so they had to cook a bit longer before the toothpick came out clean, but everything else was by the book. Delicious.

Spaghetti Squash Hash Browns

Tasty combination of flavors and all, just not a life-changing experience. We've made similar "potato pancakes" using zucchini, and these were definitely better than the zucchini. Also, I'd beg to differ on the "1-inch thick" instruction. We got a nice, mildly crisp and tasty hash brown by keeping them smaller (3 in. diameter or so) and thinner (maybe 1/2 in. thick).

Easy Snack Wraps

These are delicious! We couldn't figure out why there wouldn't be some cucumber in the wrap, so we added that (along with a touch of seasoned salt and some pepper) . . . delightful.

Addictive Sweet Potato Burritos

These were fantastic! It took a while to do all the mashing, but it was totally worth it. I didn't love them at the first sitting, but after reheating, the flavors had a little party and rocked it right on out. I froze a bunch and had them available for quick and easy lunch options.

Chicken Tikka Masala

This was absolutely amazing! Our out-of-town guests woke up the next morning still talking about it. Along the way I was a little scared if it was going to turn out, but the first bite wiped away all my fears. Everyone loved it, and this will definitely be a staple meal in our house. The only change I made was using 1/3 of the total salt and substituting chili powder for the cayenne since I didn't have any in stock. I also made tzatziki sauce to go with this, but ended up forgetting it in the fridge.

YUM! These were amazing! I have never made ribs or my own BBQ sauce before, and these were definitely a hit. I skipped the whiskey because I didn't have it, and the sauce was great anyway. This recipe's a keeper!

Quinoa Tabbouleh

This is one of our favorite dishes. I can't believe I've waited so long to rate it! I've made it multiple times, and it's perfect. I add a few cloves of garlic because it just seem unnatural to have garlic-less tabouleh. We smother pita with hummus, add the tabouleh, and sprinkle feta on top. Delish! My only hesitation in making this is all the chopping that goes into it. I am planning on purchasing a food processor just so I can make this more often!

Absolute Mexican Cornbread

This cornbread is amazing! I'll never make another kind. I followed the advice of other reviewers and used half the butter and sugar. I also followed Lindsay's advice and cheated by using a Jiffy mix. And finally, I only make half a batch because it's just me and my husband, so the can of diced chiles that I get is twice what the recipe calls for, but I throw the whole can in anyway. It's perfect every time.

Barbecue Tofu Sandwiches

This was my first attempt at cooking tofu and it turned out pretty well. I think I cut the tofu wrong to begin with because I ended up having to fry lots of little pieces. Next time I'll slice it so I have the biggest surface area cut. Overall it was pretty easy. I followed another reviewers suggestion to add worsterschire sauce and garlic salt to the tofu before cooking. I served it on Kaiser rolls with cheddar cheese, tomato, and lettuce. A whole block of tofu ended up making 3-4 sandwiches.
