Bean Quesadillas

So good my husband forgot he was eating veggies. He said it tasted just like the ones we get at his favorite restaurant. I found the filling did not come even close to making 12 quesadillas. I was only able to make four. But I made them with a whole tortilla on top and bottom instead of folded in half. Next time I will make it with a little more cheese to help hold it together better; a pepper jack would be good. I'd also add some chopped green chilies or jalapenos (we like our food spicy.) We dipped in salsa and zesty ranch sauce (Old El Paso makes a great one). My 21 month old liked them too.

Quinoa and Black Beans

Everyone in my family hates cilantro, but they gobbled this up. It was my first time to use quinoa and it was really good. Will try soaking it for an hour first next time. I may add a pinch more cayenne next time for a little more kick but was good as is. I fixed as the main dish but would've been better as a side dish especially for my husband who was still hungry afterward.

Make Ahead Lunch Wraps

Each time I make these, I put different spices/ingredients in it to mix it up a little. My favorite were the sauted onions, red peppers and jalepenos. I mixed up a batch and took them to the beach with us. People could grab one and heat it up when they were hungry. I always have a batch in the freezer to have on hand and they're healthier than pizza rolls or Hot Pockets.

Dill, Feta and Garlic Cream Cheese Spread

Very garlic-y, which I like. I used as a spread on a veggie wrap. Even got my two year old to eat a plate full of raw veggies (red, yellow and green peppers, yellow squash, zucchini and cucumber) she loved to dip them in it. Definitely will make this again. It's so easy and tastes great on a hot summer afternoon for lunch. Ok, after I wrote this review and the dip had set in the frig for a day or two, the garlic continued to intensify. Still good, but don't plan on going to meeting or on a date afterward!

Garlic Cucumber Dip

Awesome dip, I used as a spread for a veggie roll-up. I love garlic, but this was a little too garlic-y. Wouldn't eat before going to a meeting or a date! Every time I make this I like it more and more. Amazing on an everything bagel stacked full of veggies (cucumber, romaine, tomato and avocado) Mmmm!!

Sesame Green Beans

I've been looking for good veggie recipes that weren't too complicated or fattening. This was exactly what I was looking for. Lots of flavor but not a ton of butter/fat. I agree with others, I was tempted to add garlic or other seasonings, but didn't. Glad I decided not to, it was delicious as is.

Black Bean Rice Burgers

Surprisingly easy for my first try at making a veggie burger. I made as is and got a little excited and prematurely flipped which caused them to break apart a little. I just mushed them back together and the more they cooked, the better they held together. I did turn my temp down which seemed to help. They were very tasty and filling. Will definitely make again and again. There are endless possibilities as to what I could add to make them taste different each time.

Baked Ziti I

Awesome! My two and three year old gobbled this up and asked for more. Use a deep 9 x 13 pan. It wouldn't all fit in my pan. I made it according to the recipe and the provolone didn't let the sauce settle into the pan and fill in around the noodles. So next time I think I'll layer the cooked ziti, then the sauce and then the provolone, etc... Next time I think I might try using minced garlic with the onion.

Horchata (Cinnamon Rice Milk)

Did not work at all. Don't know what I did wrong, but wouldn't even go through the cheese cloth. Tasted nothing like the Horchata I had when living in Phoenix.

Chicken Pot Pie IX

Recipe says it is 8 servings, but if you have men or hungry teens it's more like 4 servings. Next time I'll double it and make 2 pies or make more hearty sides. I left out the celery and celery seed because my family doesn't like them and it was scrumptious!

Cajun Style Baked Sweet Potato

I cube my sweet potatoes so there is more flavor in each bite and they don't take as long to cook. I have tried every recipe out there to get my family to eat sweet potatoes and this is the only way they'll eat them. There is never any leftover, they love them.

Smoky Chipotle Hummus

Not bad, but not what I was expecting and takes some odd ingredience that I wouldn't use in other recipes, so they'll probably go to waste unless I make a ton of hummus. I'm going to try other recipes. If I do make this one again I'm going to try leaving it in the food processor a little longer on the last step to get the sun dried tomatoes good and small. I think mine was too lumpy. I would also cut down on the lime, it was a little strong with the citrus for my taste.

Easy Pizza Sauce III

Kind of bland first go around with handmade pizza dough. Next time used sparingly w/flat bread and used an Italian 6-cheese blend topped with fresh shaved parmesan. Baked @ 350 for 10 mins then broiled on low for 2-3 mins. Very good!! I do like the garlic flavor of the sauce.

Hearty Chicken Tortilla Soup

Not full of flavor, but good. Used store bought crunchy tortilla strips instead of making my own to save time. The smaller I cut the chicken, the more I liked the taste.
