Dinner tonight - 12/8/10 - Super fast

First off, we've been a little absent lately ... mainly this is because it's Christmas Party season. Friday night we hosted one party & Saturday we were off to another. Friday, we did a pot luck & only provided the meat - my husband's "famous" smoked
pulled pork. I can't help you with that recipe. Saturday was another pot luck & we again provided the meat - a NY Strip roast. Again, husband smoked this & I have no clue what he did as I was taking a much needed nap. Sunday & Monday were leftovers.
Well, I'm a single mom this week. Not complaining, just stating. I abandon my husband all the time, so this is only fair play. This does, of course, mean that dinner is as quick as possible. Last night was Panera & tomorrow will be leftovers. Tonight
was super fast pork chops - I lightly season with salt, pepper &

from Penzey's spice company. I cook each side about 3 minutes on the stove top in the cast iron skillet. Then, throw the whole pan into a 375 degree oven to finish them off (target 140 degrees, tonights was a little higher, but still good).
With that I had Trader Joe's polenta from a tube (heated on the stove for a few minutes on each side) & Steamfresh veggies from the freezer. Seriously, these are my favorite timesaver ever!
