Three Meat Cannelloni Bake

Reviewed: Jan. 13, 2013
great. made with one pound each veal and beef, didn't use onions. Sauteed the vegetables using grease from fat back. First night I made it with just the stuffing part and served it over pasta. The second night I stuffed it in pasta shells and baked with marinara/cream sauce. Very good both ways. I may have even preferred it the first night. good enough to serve for company. would make again.

Patty's Mom's Black Bean Soup

Reviewed: Jan. 28, 2013
Very flavorful. Couldn't find a ham bone but found two pieces of smoked ham with bone still in it and also used some fat back. Very good and hammy. I didn't chop the parsley, I just kind of placed it in the pot and then fished it out before pureeing the soup. I also added one red pepper. Would definitely make again.

Momma Pritchett's Grilled Pork Chops and Apple-Pear Topping

Reviewed: Apr. 28, 2012
My husband and I both loved this. Hubby isn't into cumin, so I used probably less than a teaspoon in the marinade. We broiled the pork in the oven, but didn't squeeze the lime over it - though I'm sure that would have been good. Also, we didn't use pears for the topping, plus just softened the apples on the stove and called it done. Delicious.

Herb Roasted Pork

Reviewed: Jan. 2, 2008
I used a bone-in pork roast because that was all that was available, and it was fantastic. I made it for a huge Christmas party and everyone loved it. I put the rub on the night before. When I make it again I'll try doubling the amount of the rub.

White Chili I

Reviewed: Jun. 27, 2012
This was fantastic! Hubby and I both loved. I followed the recipe except I sauteed the onions and garlic in coconut oil, not olive oil, used only 1 1/4 tsp. cumin (not husband's favorite spice), used about 3 cups of grated cheese, salted liberally, and added about 3 tbsp. of butter at the end. Very, very good. It may be even better as leftovers tomorrow.

Old-Fashioned Roasted Pecans

Reviewed: Jan. 20, 2008
these were good, but I wish they were a little more flavorful. I used about 1/3 white sugar, I'd use all brown sugar next time. If I were to make them again, I'd add more salt and might try the spices suggested by another reviewer.

Rustic Sweet Cornbread

Reviewed: Jan. 19, 2011
It's not that this is a bad recipe, but I just don't think it tastes like cornbread. This is a "cornbread" for people who don't like cornbread--it really tastes a lot like cake. If that's how you like it, you may be very happy with this recipe. I would suggest adding just a touch more of the faux buttermilk, as it is a little on the dryer side. Serving with butter and warm honey is a great touch for this bread. We won't try this again as we prefer cornmeal flavor/texture to the flour.
