Patty's Mom's Black Bean Soup
Very flavorful. Couldn't find a ham bone but found two pieces of smoked ham with bone still in it and also used some fat back. Very good and hammy. I didn't chop the parsley, I just kind of placed it in the pot and then fished it out before pureeing the soup. I also added one red pepper. Would definitely make again.

Three Meat Cannelloni Bake
great. made with one pound each veal and beef, didn't use onions. Sauteed the vegetables using grease from fat back. First night I made it with just the stuffing part and served it over pasta. The second night I stuffed it in pasta shells and baked with marinara/cream sauce. Very good both ways. I may have even preferred it the first night. good enough to serve for company. would make again.

White Chili I
This was fantastic! Hubby and I both loved. I followed the recipe except I sauteed the onions and garlic in coconut oil, not olive oil, used only 1 1/4 tsp. cumin (not husband's favorite spice), used about 3 cups of grated cheese, salted liberally, and added about 3 tbsp. of butter at the end. Very, very good. It may be even better as leftovers tomorrow.
