Fish Taco Sauce

I made this tonight, I added about 1/3 tsp of Mrs. Dash Southwestern Chipotle seasoning to it. My family really liked it. I will definitely be making this again

Crustless Spinach Quiche

My mother & I really enjoyed this, we added fresh mushrooms to it. The recipe is too much for the 2 of us. I cut it into 6 servings, & for us to have over the course of 2 dinners, (& then some) Idk if it's freezable, but next time I'll adjust it to make 4 servings instead.

My family really enjoyed this, although it was a little on the sweet side, so next time (& there will be a next time) I'll cut the sugar in 1/2 & add some granulated onion.

Chili Rellenos Casserole

I used fresh poblano chilis (3 lg) I roasted them 1st & removed the outer skin ( preheat broiler to 500 degrees f, then roast the chilis 10-15 minutes, turning chili's 2-3 times to roast evenly) outside of that, the rest of the recipe was really good, I will double the peppers & will triple the eggs, milk & flour next time just because I thought it wasn't filling enough this way, (& cuz we all wanted more)really REALLY good. :)
