Eggless Tofu Spinach Quiche

I made this for a vegan friend's party, using soy milk and some weird tapioca starch cheese in place of the cheddar and swiss, and it still came out good! I did make some changes, and used a 12 oz package of tofu, as I couldn't find an 8 oz package. I also sauteed the onion and some bell pepper in some vegan margarine to develop the flavors. I ended up making mini quiches for the party- I used a biscuit cutter to cut small circles of pie crust and put them in a mini muffin tin; they were done in about 25 minutes. All in all, a pretty good substitute for an egg quiche.

Sweet, Salty, Spicy Party Nuts

Very easy recipe to make. My guests liked the nuts, especially the mild spicy aftertaste. I did have a little bit of a problem with the nuts sticking together in the bowl, maybe I didn't roast them for long enough? I just put a metal serving spoon in the bowl with the nuts so guests could sort of jab at the nuts to break them apart. They were delicious nonetheless.

Artichoke & Spinach Dip Restaurant Style

This is my go-to dip for parties and get togethers. I've used the regular alfredo sauce in the past, but I like the garlic alfredo sauce the best. Yesterday I made this in the slow cooker, and it turned out really well. Cooked it on low for 3 hours, and turned the slow cooker to warm during the party, and it stayed hot for the next 4 hours. Depending on how much time I have, I think I will be making it in the slow cooker from now on!

Banana Chocolate Chip Cookies

Delicious! I did turn down the oven temp to 375 right before putting them in, and I only baked them for 10-11 minutes because I was using dark cookie sheets (and my husband is picky about brown cookies). I made no changes to the ingredients. They turned out cakey, moist and beautiful. Normally my chocolate chip cookies come out flat, but these puffed up nicely and stayed that way. They are not strongly banana flavored, but the banana may become more dominant as they cool (as I have only had them warm from the oven so far). A definite keeper recipe for any black bananas no one will eat!

Fluffy Peanut Butter Frosting

I was looking for a peanut butter frosting that did not have cream cheese, and found this fantastic recipe! I frosted a chocolate cake with this, and got many conmpliments. Everyone found it very peanut-buttery. I only had 3/4 cup of peanut butter, so I melted peanut butter chips and beat them in, which might have added more peanut butter flavor. This will be my go-to peanut butter frosting recipe from now on.

Donut Muffins

Love these! Especially good still warm from the oven. I do recommend storing leftovers in the fridge, as I didn't, and they tasted funky a day later.

Sunday Dinner Rolls

The dough was too sticky and floppy (for lack of a better word) to rise into the shape of crescents, so they ended up looking like fat bread sticks. We also found the rolls to be pretty bland. I probably won't be using this recipe again.

Fluffy Whole Wheat Biscuits

I use this recipe as my go-to for a biscuit side-dish. I even use it for dumplings in my chicken and dumplings. However, I have discovered they come out better as biscuits if I use more butter.

Jalapeno Poppers I

Love these! A little labor intensive when you're making them for 50 people, so by the end, we ended up chopping up the remaining peppers and mixed them with the remaining cheese mixture, putting it in a casserole dish and baking it after sprinkling it with breadcrumbs: turned out delicious! I think we might be making the Jalapeno Popper dip from now on!

Fat Pete's Fudge

I'm not personally a fan of fudge, but the family thought this was just "ok." I got a couple reports that it was too marshmallow-y, the color was off-putting (I guess it was not the super-dark colored fudge they're used to), and the peanut butter was not consistent (which was my own fault).

Quick and Easy Chicken Noodle Soup

Yum! I used homemade chicken stock in place of both canned broths in the original recipe, and also sauteed the carrots along with the celery and onion. I boiled two chicken breasts in the soup as it was simmering. It turned out great!

Carrot Cake III

I got many compliments on my cake, however I did use many suggestions from the top rated reviewer (used a can of pineapple, 1/2 brown sugar and 1/2 white sugar, extra cinnamon and extra vanilla). Also I didn't use pecans in case of an allergy. Ok, so I made quite a few changes, but it was delicious anyway!
